Stop using oil in your sponge cake and try warm cream instead.
This is one of my favorite sponge cake secrets, and it makes such a beautiful difference.
Growing up in Scandinavia, we never used oil or butter in the sponge cakes I remember. And honestly, I understand why.
After I gently fold in the flour, I like to add warm heavy cream at the very end.
Why warm cream?
First of all, it tastes so much better than oil.
It adds fat, just like oil or butter, but the flavor is softer, richer, and more delicious.
It also helps dissolve any tiny flour pockets that may be hiding in the batter after the flour has been folded in.
And because the cream is warm, it gives the sponge a lovely head start when it goes into the oven. That little bit of warmth helps the cake rise beautifully and bake into a soft, tender crumb.
The result is a light, fluffy sponge cake with a better flavor and a beautiful texture.
If you usually add oil to your sponge cake, try warm cream next time. It might become your new favorite method.

Have you ever tried using an instant read thermometer to check your baked goods! I love how it helps me reliably know that my brownies will be fudgey, and my custards will be silky but also cooked through (so they’re safe to eat!). At the end of this video I share a little cheat sheet you can screenshot so you can check the internal temps of your baked goods! #pastrytips #howtobake #bakingtips #pastrycheflife
A couple other notable mentions for frozen dough🍪🤙🏼
Freezer space is a big one for us! We have a stand up freezer dedicated just to cookie dough. This makes it so we can prep cookie dough for markets and large orders a few days ahead of time without worrying about then spoiling.
We’re chasing the least amount of spread for our cookies! Frozen dough has given us the most consistent, uniform cookies.
Do you bake from frozen? Why or why not?

Baking Powder vs Baking Soda — jangan asal tukar! 🥞
Ternyata keduanya punya cara kerja berbeda. Baking soda membutuhkan bahan asam untuk bereaksi, sedangkan baking powder sudah mengandung komponen asam dan basa.
Untuk martabak manis, takaran dan keseimbangan bahan sangat menentukan sarang, tekstur, dan rasa.
Resep singkat:
250 g tepung terigu • 30 g gula • 1 telur • 300 ml air • 1 sdt baking powder • ½ sdt baking soda • ¼ sdt garam • vanili secukupnya.
Campur → diamkan 30–60 menit → masukkan baking soda → masak di teflon panas dengan api yang tepat → beri topping sesuai selera.
💡 Ingat: baking powder ≠ baking soda. Jangan asal mengganti 1:1!

Stop making flat muffins! 🛑👇 SAVE this post because this 2-phase baking hack is the ultimate secret to those tall, bakery-style domes! 🧁✨
Did you know the secret isn't just in the batter, but in the OVEN TEMP? Here is how to do it:
🔥 THE BAKERY HACK:
1️⃣ Phase 1 (218°C / 425°F): Bake at high heat first! This rapidly expands the baking powder gases & creates steam, forcing the muffin to shoot up and form that perfect dome before the crust sets.
For small muffins: 5 minutes
For large muffins: 7 minutes
2️⃣ Phase 2 (180°C / 350°F): Drop the temp! This lets the center bake evenly without burning the top, leaving you with a fluffy inside and crispy top.
For small muffins: 10 minutes
For large muffins: 15 minutes
📝 INGREDIENTS (Makes 12 small or 9 large):
• 135g White Sugar
• 280g All-purpose Flour
• 150g Chocolate Chips (+ extra for topping 🍫)
• 10g Baking Powder
• 2 Eggs
• 180g Milk
• 100g Melted Butter (or Vegetable Oil)
• 2 tsp Vanilla

Day 4 of bringing it back to home ec…when baking cakes, muffins, or breads, don’t just add chocolate chips like that…make sure to coat your heavy mix-ins with flour prior to folding into the batter.
This helps the pieces grip and stay suspended instead of sliding straight to the bottom.
This also goes for nuts, blueberries, and dried fruit.
