Hey yall. Chef Damone here! 👋🏾

This is the season of giving and gratitude, and I have a huge ask of you everyone who has enjoyed my food.

Jamaica is the reason I am who I am today. 🇯🇲

In the wake of Hurricane Melissa, many of our brothers and sisters in Jamaica are facing tremendous hardship and loss. It is incredibly sad for me to see the physical damage that the storm has had on the country. And while Jamaicans are some of the strongest, most resilient people I know, I also acknowledge the pain I see in people’s eyes. I see concern about the future. And I want to help address it.

As part of our mission to serve, and to do our part to assist our home country, we’re opening our truck and our hearts to collect non-perishable food and clothing donations to send directly to families in need back home on the island. 💛💚🖤

From now through the next few weeks, drop off items at the Tamarind & Thyme food truck no matter which location we are at. Every can, every item of clothing, every gesture helps rebuild hope for an island that is truly in need at this time.

This isn’t just about giving… it’s about standing together as human beings to make sure we do our part to help.

Let’s feed the spirit of Jamaica — one donation at a time.

Connecticut new food truck alert! 🚨 Norwalk Connecticut is home to great food scene in the state and @tamarindthyme is adding Caribbean island fusion and making their own mark. Connecticut foodies you need to add this to your list. I tried the Kingston chopped cheese and the Po’boy but the entire menu is a must try for real foodies.

Before anything else, I want to say thank you. Whether you’ve visited the truck, booked us for an event, shared our posts, or recommended us to friends and family, you’ve played a part in helping Tamarind & Thyme become what it is today. Your support has meant more than you know, and I am truly grateful.

Over the past 6 months, we’ve experienced some unforeseen technical challenges that have made it difficult to provide the consistency and reliability that you deserve in our service days and hours. At the same time, I’ve been navigating one of the biggest transitions of my life. After the end of my marriage, I relocated to New York to begin a new chapter. While these changes have been deeply personal, they’ve also given me the opportunity to reflect on how I want to build this business moving forward.

One thing has never changed: my commitment to excellence. At Tamarind & Thyme, we believe every meal, every interaction, and every event should reflect the highest standard of quality and hospitality. Rather than operating below that standard, I’ve made the decision to intentionally step away from regular food truck service. During this time, we’ll be making necessary repairs to the truck, strengthening our operations, and positioning Tamarind & Thyme for long-term success.

Sometimes the strongest thing you can do for your business is pause, rebuild, and return stronger than before.

This is not the end of Tamarind & Thyme. It’s the beginning of its next chapter.

While the truck is taking a temporary pause, @islandinfusionscatering remains fully operational. We are actively accepting catering, private chef experiences, corporate events, weddings, festivals, and special event bookings. If you have an upcoming event, we’d be honored to be part of it.

There are exciting things ahead, and I truly believe our best days are still to come. Thank you for your patience, your grace, and for continuing to believe in my vision. I look forward to sharing what’s next and serving you again soon.

It’s been a while, Tamarind & Thyme family!

With the weather improving, and a lot of the snow melting, we have a message we want to get out to our amazing customers…

We’re back!

We will be parked at two of our usual spots during the week at Brim and Crown and at Curb Apartments, but are urgently looking for locations we can park for Tuesdays and Saturdays! If you know of any luxury apartments, businesses, breweries, vineyards, colleges, yacht clubs, etc interested in service, let us know!

We are excited to get back to doing what we love best: cooking delicious food for our customers, getting to meet the incredible people in the Norwalk community, and doing our part to uplift Caribbean food!

Our best selling sandwich is actually our flagship sandwich, our Jerk Chicken Cheesesteak! Mixing the flavors of Jamaica with Philly’s famous sandwich, the aroma and spice of our pulled jerk chicken marries beautifully with cheese, our scotch bonnet aioli, and jerk sauce over a toasted roll to create a unique and delicious sandwich!
