Restored Historic Irish Thatched Farmhouse & Stone Barn. Tailored Stays, Workshops & Retreats. Host @imenmcdonnell Member

POSTS STORIES REELS TAGGED
At long last, an update on our thatched farm project! 2023 was certainly a year for patience and hard work on the thatched cottage and stone barn. I know I promised updates throughout the last year, but honestly had no idea the undertaking/sheer scale of it — there simply wasn’t time to pull it all together and share on social media.

It’s been—and continues to be—a learning experience around the restoration, preservation and balance between the pragmatic and historic. Curating the look and feel to make it truly special for everyone who visits; honouring the traditional and the native has been such a privilege 🙏🏼.

So here we are, from the “big dig-out” to water reed harvesting/re-thatching, timber window rehabbing, putting in a bathroom!, lime rendering (@roundtower_lime), pointing, flagstone laying (@whitehallflagstones), bespoke cottage door hanging (Irish Cottage Doors Kerry), to inspiring landscape chats with the extraordinary Catherine Fitzgerald, (@catofglin), loads of additions to my interiors/furnishing plans/vision board, a whole lot of special pieces in between and plenty more work to complete!

I have been keeping a diary compiling heaps of historical research, fascinating stories, photos and maps of this charming homestead and land, the gorgeous humble people who came before us, vintage and vernacular treasures that we uncovered, recipes and poetry and song…there is so much to share. If you are interested in this sort of thing and want to follow our progress more intimately, please sign up for updates at thatchedfarmproject.com or use the link in profile.

A most marvellous stone barn summer supper at @thatchedfarmproject.
21 August 2026.
Guest Chef @lilystarbuck (with a little kitchen help from Geoff & myself, Gwynn & Aisling) using ingredients from @kellyoysters @newleafurban @urbanco_oplimerick, @kilcornanmarketgarden, @pike.deli @jameswhelanbutchers, @guinness wild blackberries and other bits from the cottage garden. Lily’s oysters over fire from the 18th century hearth - unforgettable.
Great fun with @catofglin & fam, @garrettmurphy @clareconway and all the McDonnells. #stonebarnsupper #thatchedfarmproject by @thatchedfarmproject

It was an absolute pleasure to welcome the wonderfully talented and kind @cheriedenhamcooks to the @thatchedfarmproject for a very special private Irish cookery experience with a pair of lovely American guests staying locally at @theadaremanor over the weekend.

Between all of us, we made quite a feast. Cherie gave lessons in baking her beautiful scones along with making homemade lemon curd, while I revisited my clotted cream recipe from The Farmette Cookbook for the first time in years. (See the skimming of the sheet pan —the easiest and most delicious treat I swear!)

Our gorgeous guests also learned to make fresh Irish butter with Cherie, and we baked Irish soda bread in a cast-iron bastible over the turf fire in our 18th-century stone barn, literally one of the best ways to bring back time-honoured cookery skills to this historic place. Cherie came with such valuable knowledge of this type of hearth baking as she learned while travelling throughout Ireland to make her stunning books: The Irish Bakery and The Irish Kitchen with acclaimed photographer @montgomerypress.

After the learning, we all gathered around the cottage kitchen table with bowls of potato and leek soup from the garden, thick cuts of our bastible soda bread, and a selection of some of the best Irish farmhouse cheeses & charcuterie in the country. We finished off with our bounty of scones, fresh butter, lemon curd, clotted cream and homemade blackberry and apple preserves from the fruit growing here at the thatch.

A very happy few hours of making, learning, sharing stories and, the best part, eating!

I loved loved loved working with Cherie. Here’s to many more experiences like this. ❤️🙏🏼

Thank you @piquetravel @melissadurkee @zoebakes @stephaniemarch for this amazing opportunity.

An Autumn Weekend of Willow Weaving at @thatchedfarmproject 🍂

31 October & 1 November · Samhain

As the seasons turn and we enter the season of Samhain, we’ll be gathering around the fire in the stone barn for a very special weekend of making.

Join acclaimed Galway-based artisan basketmaker @sarahjenkinsonbaskets for two days of the traditional craft of willow weaving, using beautiful Irish-grown organic willow.

With Sarah’s guidance, you’ll learn a variety of traditional weaves while making your very own gorgeous willow platter or Ciseog/Skib to take home.

No previous experience is needed. Just come along, settle in by the cosy hearth and spend a few hours working with your hands, learning an ancient Irish craft and enjoying the pleasure of making something slowly.

And because this is the thatch, there will of course be something seasonal and delicious to eat, warm drinks and good cheer.

Three workshops across the weekend.

Saturday 31 October
10-1PM or 2PM-5PM €150 (Includes coffee/tea/drinks and something baked and lovely from the thatch kitchen)

Sunday 1 November
10AM-5PM Full Day Retreat €250. (Includes a hearty seasonal harvest lunch from the thatch kitchen.)

Very limited places.

DM here or email info@thatchedfarmproject.com to reserve your spot.

Hope to see you here!
Imen, Agnes, Claire & Sarah xx

Accommodation may be available at an extra cost. Can also make referrals for nearby accommodation. We are 20 minutes from Adare or Glin, 40 mins from Limerick.

A little taste of our #brayersbagelsandbloodys Printmakers Brunch at @thethatchedfarmproject with artist @claire_forward_artist leading participants into the wonderful world of botanical gel printing. Brayers were rolled, foraged botanicals pressed, colour was blooming. Our gorgeous group gathered from Cork, Galway, Clare, Dublin, Roscommon, Meath as well as right here in Limerick.

And then there was the food. @a_bouchier baked off her beautiful scones. I put together some salted honey (thanks @garrettmurphy 🍯 ) iced lattes, Amelia was the best extra set of hands, and the pièce de résistance was New York chef @lilystarbuck, who splits her time between Brooklyn and West Cork, coming in fierce with her corn chowder, proper NY-style bagels and horseradish-infused legit Bloody Marys, all served under the hay shed on the perpetually soft, Sunday afternoon.

Our table was filled with the very best of here and there: @newleafurban @kilcornanmarketgarden, Limerick @woodcocksmokery smoked mackerel & salmon, West Cork, @gubbeen cheeses and cured meats, West Cork, @gra_farm tomatoes, @bannerberries Co Clare, Croom eggs, Limerick, bits from the thatch beds (thank you @triniscully for the garden tidy 🙏🏼), and just so many other beautiful local hands behind the feast.

Art, food, friendship, foraging, making and a little slice of New York on an Irish farm.

Grateful for Claire, for Agnes, for Lily, for Amelia, for our wonderful suppliers, and ESPECIALLY for everyone who came and made the day what it was!

Inspired by the abundance of midsummer, Claire will guide participants through the process of transforming leaves, flowers, and wild plants into striking botanical artworks.

The workshop includes a seasonal farm brunch designed and prepared by @imenmcdonnell & @a_bouchier featuring locally sourced ingredients, served with coffee, tea, and good conversation around the table. Each participant will leave with prints of their own design at the end of the day.
