Staying full & not hangry is the key to travel days !! Here’s what I ate during a 5 hour car ride this weekend.

Gas stops = protein bars, fruit snacks/bars, healthy(ish) chips, trail mix, things of that nature are what I grab

On road trips I will just search on maps to hunt down places w vegan options. Moe’s was a solid choice to stop for lunch because I know I can always get something there (except this Moe’s was out of tofu so that was a punch to the gut, sigh… double beans it is)

This @traderjoes pumpkin gnocchi and maple butter is the most insane fall combo. All I did was sautee some vegan sausage and spinach in the maple butter, cook the gnocchi, dumped it into the pan, added non dairy heavy cream, salt & pepper, and combined.

So cozy, I will be running back to the store for more soon 🏃🏼‍♀️
