Your sign to make Swedish cinnamon buns from scratch. Soft, buttery, fragrant and packed with cardamom + cinnamon. And the overnight proof? Game changer. Recipe below ↓ Makes 6

TANGZHONG
18g bread flour, 84g milk Cook together until a smooth paste forms. Cool.

DOUGH
316g bread flour, Tangzhong, 112g milk, 1 large eggs, 30g caster sugar, 5g instant yeast, 5g salt, 6.7g freshly ground cardamom, 64g softened butter
Mix everything except the butter and knead for 8 mins. Gradually add the butter and knead for another 10–15 mins, until smooth and passes the windowpane test. Rest for 45–60 mins, then refrigerate overnight.

FILLING
80g butter, 50g caster sugar, 35g dark brown sugar, 3tsp Cinnamon, 2tsp plain flour, Pinch of salt
Roll dough to approximately 40 × 25cm — this keeps the dough thickness similar while giving you enough area to create 8 buns. Spread with filling, fold into thirds and lightly roll out. Cut into 8 strips, twist and shape into knots. Proof for 1–2 hours.

EGG WASH
1 egg Brush over the buns and bake at 180°C fan for around 16 mins. As soon as they come out of the oven, brush again with egg wash and sprinkle with pearl sugar.

Oatmeal Raisin Pecan Sourdough Cookies. Brown butter meets sourdough in the ultimate oatmeal cookie. Save this for your next sourdough baking day.

114g unsalted butter, browned (~95g)
75g soft brown sugar
75g caster sugar
1 egg yolk
2 tsp vanilla extract
90g sourdough discard
45g plain flour
35g strong bread flour
100g rolled oats
½ tsp bicarbonate of soda
¾ tsp fine salt
½ tsp cinnamon
⅛ tsp nutmeg (optional)
100g raisins
55g chopped pecans

Method

1. Melt the butter in a small saucepan over medium heat. Cook until it foams, the milk solids turn deep golden, and it smells nutty. Transfer to a heatproof bowl and cool until warm but still liquid.
2. Add both sugars to the warm browned butter and whisk well until glossy and slightly thickened.
3. Whisk in the egg yolk, vanilla and sourdough discard until smooth and emulsified.
4. In a separate bowl, whisk together: flours, oats, Bicarbonate of soda and Salt
5. Fold the dry ingredients into the wet just until no dry patches remain. Stir in the raisins and pecans.
6. Chill the dough for at least 4 hours but overnight is my preference for deeper flavour. (If chilled, let the dough sit out 15–20 minutes before baking.)
7. Bake - Heat oven to 160°C fan. Line a tray with baking paper.
Weigh your dough and divide into 8 and place on a baking tray.
Bake for 10mins, then Immediately bang the tray firmly on the counter once or twice. Before returning to the oven for a further 6 minutes, until edges are set and lightly golden but centres still look soft. Finish - Sprinkle with sea salt. Let cookies cool on the tray for 5–10 minutes.

Custard Cream Brownies. Just when you thought brownies couldn’t get any better… Custard Cream spread happened. Recipe Below:

Ingredients:
* 1 jar M&S Custard Cream Spread
* 150g soft brown sugar
* 100g caster sugar
* 140g butter
* 2 large eggs
* 75g cocoa powder
* 50g plain flour
* ½ tsp baking powder
* 1 tsp espresso powder
* 2 tsp vanilla extract

Method:
1. Preheat your oven to 160°C fan (180°C conventional). Line an 8x8-inch (20x20cm) baking tin with parchment paper.
2. In a saucepan, gently melt the butter with both sugars over low heat until smooth and the sugar is mostly dissolved. Remove from heat and let cool slightly.
3. Transfer the mixture to a mixing bowl. Add the eggs one at a time, whisking well after each addition until the batter becomes pale and fluffy.
4. Whisk in the cocoa powder, espresso powder, and vanilla extract until fully combined.
5. Gently fold in the flour and baking powder, followed by the chopped hazelnuts.
6. Pour the batter into your prepared tin. Dollop generous teaspoons of the custard cream spread across the top, then swirl gently with a knife or skewer for a marbled effect.
7. Bake for 25–30 minutes, until the edges are set but the centre is still slightly gooey.
8. Allow to cool completely in the tin. Then chill in the fridge for at least 4 hours — overnight is best for that ultimate fudgy texture.

Spiced Apple & Walnut Cake. Your new favourite autumn bake is here. Full recipe in the caption 👇

Ingredients
350g plain flour
1½ tsp baking powder
½ tsp bicarbonate of soda
2½ tsp ground cinnamon
½ tsp ground nutmeg
½ tsp fine salt
220g vegetable oil
120g Greek yoghurt
220g light brown sugar
50g caster sugar
3 large eggs
2 tsp vanilla extract
4 medium apples, peeled, cored and diced
90g walnuts, finely chopped
To Decorate
50g butter, melted
100g caster sugar
2 tsp ground cinnamon

Method
1. Prepare the apples: Place the diced apples in a saucepan with 90ml water. Cook gently for around 10 minutes, stirring occasionally, until the water has evaporated and the apples are very soft and mushy. Leave to cool completely. You can prepare the apples a day in advance and keep them covered in the fridge.
2. Make the batter: Preheat your oven to 160°C fan. Grease a 10-cup Nordic Ware Bundt pan thoroughly.
3. Add the light brown sugar, caster sugar, vegetable oil, Greek yoghurt, eggs and vanilla extract to a large bowl. Whisk until smooth and well combined.
4. Sift in the flour, baking powder, bicarbonate of soda, cinnamon, nutmeg and salt. Mix until just combined.
5. Fold through the chopped walnuts, followed by the cooled cooked apples, until evenly distributed.
6. Pour the batter into the prepared Bundt pan and smooth the top. Bake for 50–55 minutes, or until a skewer inserted into the centre comes out clean.
7. Leave the cake to cool in the pan for 10 minutes — set a timer! — then carefully invert onto a wire rack. Allow to cool completely.
8. Decorate: Mix the caster sugar and cinnamon together in a bowl. Once the cake is completely cool, brush or coat it all over with the melted butter, then liberally cover with the cinnamon sugar.
9. Slice, serve and enjoy!

Olive Sourdough. Crispy crust, chewy crumb and SO. MANY. OLIVES. Recipe below.

Ingredients
* 100g active sourdough starter
* 400g white bread flour
* 100g white rye flour
* 375ml tepid water
* 10g salt
* 100g green & black olives

Method
1. Mix the Dough
In a large bowl, combine the active starter, white bread flour, white rye flour, and tepid water. Mix until a shaggy dough forms. Cover and leave in a warm place for 1 hour.
2. Add the Salt
Add the salt to the dough and mix using a stand mixer on medium–low speed for 5 minutes, until smooth and elastic.
3. Bulk Fermentation
Transfer the dough to a clean bowl, cover with a tea towel, and leave in a warm place for 4–5 hours.
During this time, perform 4 sets of stretch and folds, spaced roughly 1 hour apart, to strengthen the dough.
4. Add Olives & Shape
Gently fold the olives into the dough using stretch and folds. Turn onto a lightly floured surface and shape into a tight ball. Cover and rest for 30 minutes, reshaping if the dough spreads.
5. Cold Proof
Transfer the dough to a well-floured proving basket. Place the basket inside a plastic bag and refrigerate overnight.
6. Bake
The next day, remove the dough from the fridge. Place a cast iron pot with a lid (such as a Le Creuset) into the oven and preheat to 240°C (fan) for at least 20 minutes.
Turn the dough out onto a sheet of greaseproof paper, score the top, and carefully lower it into the hot pot. Cover with the lid and bake for 20 minutes.
Remove the lid and bake for a further 20 minutes, until deeply golden and crisp.

3. Add both sugars to the warm browned butter and whisk well for 30–45 seconds until glossy and slightly thickened.

6. Fold the dry ingredients into the wet just until no dry patches remain. Stir in the chopped chocolate.

9. Finish - Immediately bang the tray firmly on the counter once or twice. Top with more chopped chocolate - the heat will melt them in place!
Let cookies cool on the tray for 5–10 minutes.
