When it comes to eating enough fiber, ZUCCHINI is my miracle veggie. *recipe listed after yap*

Not only is it hydrating (good for stool), anti-inflammatory, and low in calories, it ALSO has nutrients like magnesium and Lutein (protects against age-related macular degeneration 👁️)!

Reading about the benefits of whatever produce I’m eating makes me excited to eat it, and so does learning how to make my fruits & veg taste like a delicious snack. :)

Amazingly enough, you don’t need a propane grill to grill up your zucchini. I use a Ninja Sizzler and the clean up is seamless. Starting with 4-5 Zucchinis, chop the ends off both sides. Slice down the middle to create two boats. 🛶 Halve the boats, and then quarter them making them into spears. Cut the spears in half. Add all of the halved spears into a gallon ziplock bag. A few glugs of olive oil. Pepper. Black garlic salt. Set the grill between 375-400 degrees & preheat. Drop all of the marinated spears onto the grill, making sure to flip them onto one side. After about 3 minutes or when you notice dark grill marks in the zucchini, take tongs and flip the spears so the other side can grill for another 3 minutes. Refrigerate for up to 2 days. :)

A PLL THEMED BITE 🤫🤫🤫

My first time making a buttercream! I have not decorated with frosting much, but I did notice it was a lot easier to pipe than regular store bought frosting!!!

I used @preppykitchen recipe & will link it below!

decided to get back on my BS and give you guys my favorite mississippi crock pot roast recipe, so perf for Fall 🥰

Ingredients:
🤍3-4 lb chuck roast
🤍salt, pepper, & garlic powder to season
🤍6 tbsp butter
🤍2 c reduced sodium beef stock
🤍1 yellow onion, sliced
🤍1 tbsp minced garlic (I use the kind from a jar)
🤍1 packet of Au Jus
🤍1 packet of ranch seasoning
🤍1 jar of pepperoncini

Directions:
Start by massaging the seasoning into the chuck roast, thanking the animal for its life & praying over the animal (food made with gratitude just tastes better…). Melt two tablespoons of butter over a cast iron skillet, and brown both sides of the roast on low-medium heat (about 2 minutes per side or until a slight crust has formed). Put the roast into the crockpot. Add in the sliced onion and soften. Using the 2 cups of reduced sodium broth, glaze the skillet, making sure to get all of the bits off the bottom of the pan. Add your garlic into the mixture. Stir. Add your Au Jus and Ranch seasoning packets. On medium heat, allow the broth and seasonings to thicken up, creating a gravy like texture. Pour the mixture on top of the roast. Add as many pepperoncini as you’d like (I prefer a lot!) and pour some of the juice from the jar into the crock pot (about 1 cup or less). Slice up the remaining butter into pads, and place them on top of the roast. Set on LOW for 8 hours. After 8 hours, shred the meat and use 2 cups of drippings, 2 tbsp butter, and 2 tbsp flour to create a gravy. Can be served with the classic mashed potatoes and veggies, or on top of a hoagie with provolone. ENJOY!!!❤️ by @thebutteredblondee

🍝🍝🍝

idk what to even call this pasta that i made tonight but it was soooo good, it was like a quicker version of a spicy bolognese 😍

ingredients:
•1 lb of lean ground meat
•1 red onion
•6-7 cloves of garlic
•2 1/2 cups of penne pasta
•rao’s Arrabbiata sauce
•fresh Parmesan
•crushed red pepper
•salt
•EVOO

In a cast iron skillet, saute the diced onion and garlic in the extra virgin olive oil. Add the lean ground meat to the skillet and salt it and brown it while mixing with the onion and garlic into the meat. Once cooked through, add the entire jar of red sauce. Cook your noodles and add to the skillet. Add freshly shaved Parmesan and crushed red pepper to taste!! by @thebutteredblondee

Tried my hand at making breakfast tacos for the first time!! Dare I say, they were the best breakfast tacos I’ve ever had 🤪

Ingredients:
-6 eggs
-mild sausage (I get the kind that’s in a tube-like wrapping)
-frozen or refrigerated bag of hashbrowns (I use simply potato)
-taco sized tortillas (I use the zero carb ones!!)

Instructions:
-prepare the hash browns first so they cool down in time for taco assembly. Follow instructions on package, I’ve found that using vegetable oil (unfortunately) works best when I cook them
-in a cast iron skillet, begin cooking the sausage on medium heat until no more pink is left
-scrape sausage to one side of the skillet, and add your 6 eggs to the other side
-gradually let the eggs cook, lightly scrambling. once there’s about 50% moisture left in the eggs, begin to fold them in with the sausage.
-prepare your taco by placing hashbrown in a flat layer across the tortilla, adding the egg/sausage scramble to the top. Sprinkle with shredded cheese and salsa (I personally love the chunky salsa from Great Value the Walmart brand LOL)
-enjoy ❤️❤️❤️❤️ by @thebutteredblondee
