It seems impossible for me to stop … today we went to the park with some Italian friends and I decided to make a potato focaccia. I know I said before the other focaccia was the softest but this one was incredible.

Newest baker to join staff… it took Reina some years to realize she too is a baker. But now she ruffs it a lot.. so today, in her apprenticeship she will start off baking cookies, which just happen to be doggie treats….

Dear Sunday Focaccia,
I love you!

Recipe
1000g Bread Flour
690g Water
25g Fresh Yeast
20g Olive Oil
20g Salt

Filling/topping
Sprigs of Lavender
1/2 cup green olives
1 cup cherry tomatoes
1/4 cup sundried tomatoes (chopped)

Method
1. Mix the flour, water, salt, yeast, and olive oil in mixer or by hand
2. Add sundried tomatoes and incorporate evenly into the dough
3. Place dough in lightly oiled bowl and let rest until double in size
4. Place párcheme y paper in large baking tray and put a little olive oil on the top.
5. Gently degas the dough and place in baking tray.
6. Drizzle with olive oil and then work it with your fingers from the center until it reaches all four corners. There should be no resistance
7. Sprinkle liberally with salamoia (a simple blended of olive oil and water in this case)
8. Add tomatoes, olives, and sprigs of lavender.
9. Drizzle again a bit more salamoia to ensure the top is wet
10. Sprinkle with coarse sea salt
11. Bake in preheated oven at 220 for 20-25 minutes, until nice and golden brown
12. Eat it alone, you will not want to share … well ok, share a little :)
