As competition season starts to wind down, it's always a little bittersweet for us. ❤️🔥 We love seeing our teams travel across the country, make new friends, create memories, and turn this BBQ community into one big family.

The trophies and wins are incredible, but it's the people and the moments shared around the pit that make this season so special. We're beyond proud of our teams and grateful to be part of their journey.

A little backyard BBQ tip for anyone cooking with sweet rubs!

Our DULCE ORO™ brings together honey, sugars, and spices for that beautiful color and sweet, savory flavor. But here’s something to remember: sugar and direct heat don’t always play nice.

For this cook, we fired up the Weber with a two-zone setup, kept the chicken over indirect heat, and added a little pecan wood for smoke.

Why? Because cooking indirect gives the chicken time to cook through without burning those sugars before it’s done.

And just look at that color! Beautiful chicken, cooked to 165°F.

Remember, great barbecue isn’t always about cooking directly over the fire. Sometimes letting the heat and smoke do their thing makes all the difference. @diceviceco love the carving knife. Also the heat these bomb briquettes gave off wow @thegoodcharcoal

We’ll keep sharing tips from our backyard to yours.

What’s your favorite wood to use when smoking chicken?

This week's dinner debate with the sous chef started with a simple question:

Burger or steak?

The kind of question that can divide a cookout before the charcoal even gets lit.

Some folks want the perfect burger. Others are chasing that rich, beefy bite only a steak can deliver.

Me?

I wasn't interested in choosing sides.

Cube steaks from Providence Cattle Co. hit the cutting board and got a generous coating of PS Seasoning's The Works. Then it was over to the PK300, fueled by The Good Charcoal, where the smoke started doing its thing.

Low and slow long enough to build flavor.

Hot enough at the end to lay down that beautiful sear.

The kind that lets everyone standing around the grill know it's almost time to eat.

Then came the assembly.

Toasted brioche buns.

Raw onion slices for a little crunch and bite.

A healthy drizzle of PS Seasoning Black Belt Korean BBQ Sauce bringing sweet heat, umami, and just enough attitude to tie everything together.

One bite in, and the debate was over.

Not because burger won.

Not because steak won.

Because sometimes the best meals live somewhere in between.

The tenderness of a smoked steak.
The handheld satisfaction of a burger.

The messy, flavor-packed experience that reminds you why cooking over fire never gets old.

So if you're keeping score:

Team Burger 🤝 Team Steak

Breaking in the Big Horn portable Santa Maria with the only cut that can handle the job - TRI TIP!

Smoky, juicy, tender.. and exactly what this new grill needed for a proper maiden voyage!

Nothing beats beef over live fire! Prove me wrong!

Who wants a plate?! 🥩🔥🙌🏻

A good ribeye doesn’t need much. Just some salt, a hot grill, and a perfect sear to let that beef speak for itself! 🔥

How do you like your steak cooked? 👇

There’s plenty of charcoal out there.

But for me, what’s behind the bag matters too.

@thegoodcharcoal built a company around more than just making fire. Their mission to give back and help feed people is a big part of what caught my attention.

I put the Super Briquettes through a full tri-tip cook and these things flat-out ripped.

About 20 minutes to get rolling, then they ran HOT, carried the whole cook, helped build that crust, and still had plenty of heat left when it was time for the final sear.

Good mission. Good people. Good charcoal.

...oh, and that @newwestknifeworks
12"Chris Kidder Chef Knife, absolutely sliced that tritip up like hot butter.
