I’m a big fan of growing in raised beds and pots. It offers you so many options. Luckily, I can overwinter my tender tropicals in the basement under a light, but just bringing them inside is enough. I have a small room that becomes a citrus room over winter. It’s worth a try if you’re not already doing it. I now have limes, bay leaves and herbs like thyme and rosemary that will carry me through the winter. Those Victorians were definitely on to something. #thelouisvillechef #thepasadenachef #gardening #potsandplants #herbs #cooking #cookingwithherbs by @thelionpassant

Nothing more rewarding than taking vegetable scraps and a roasted chicken carcass and creating liquid gold. The key is to always simmer, this was 14 hours and double strain when done and skim excess fat after a brief time in the fridge. Freezes very well. A lot of people don’t realize that in Laos they make a mean fried chicken. It’s a speciality. They also make an amazing grilled chicken. While similar to the Thai, Gai Yang; which makes sense since they are neighbors. It’s got its own unique flavor, and uses copious amounts of black pepper.
