Indian at heart, global in spirit! Amit comes from a humble background in India, a land of many cuisines. Because his father’s military background he got to travel a lot and try a wide range of different local cuisines, which has inspired him to go deep into flavor explorations, leading him to become a chef, now in Belgium, working at the three Michelin star, Boury (@__boury__).

Reading all the news and people talking things about the big news of Noma, I feel it's time for some throwback!

Noma is not just a restaurant, it's an institution which makes you bigger, better, stronger as a cook, and a human! It changed the way I used to look at ingredients, and I have gained so much from it!

It has been the best restaurant in the world for far too long to bring shock waves in the industry and the big news affirms that. Noma 3.0 is gonna be a new era, a new beginning to many new mindsets in the industry above and beyond.

I’ve come a long way from where I started. Someone recently asked me how I got to where I am without a degree from a world-renowned school, coming from a small city.

It made me reflect on the journey, the risks, the sacrifices, and the countless hours of work that brought me here. Sometimes, you don’t need the perfect starting point. You just need the hunger to keep going, the courage to dream bigger, and the discipline to show up every single day.

I’m proud of how far I’ve come, but more than anything, I’m grateful to be here. Still learning, still growing, and still a long way from where I want to be.

Banana Flower, an ingredient I wanted to create something with since I was a chef, but could never find a variation “cool enough ;
Untill I finally did with chef @ste_casale_ and I am so proud of what we created, and to represent a dish so deep rooted from my family, traditions and culture. Thankyou Chef Stefano!!
