A history buff with an appreciation for global cuisine, Sous Chef Brian Nguyen takes inspiration from nostalgic meals growing up in an immigrant community.

Brian’s rendition of “Shrimp and Grits” debuted in our last brunch, and has been a mainstay on our menu ever since. This dish was inspired by a Puerto Rican favorite his friend’s parents would prepare with seasoned grits steamed in banana leaf. Adding elements from the Vietnamese “xôi mặn”, which translates directly as “savory sticky rice”, this dish also showcases Brian’s Vietnamese roots.

Sorry, we’ve got a lot on our plate… and we’re not mad about it. Our Vermicelli Power Bowl is fully loaded with BBQ grilled pork, crisp lettuce, fresh herbs, crunchy pickles, and just the right amount of Nước Chấm to keep things saucy.
