If you ever go to Prince Edward County, you MUST go to @bloomfieldpublichouse! 😍

I had the pleasure of photographing the space + the food during @christinereidphoto restaurant photography workshop and it was all so stunning!

They have a seasonal changing menu where they showcase local ingredients. I honestly can’t put into words how delicious the food is. The flavour combos were incredible!

What I loved about the space is the unique tables, chairs, art and the tableware. Most of the plates are thrifted. And it used to be a bank. How cool!

And the lighting…a photographers dream. 😍 I got to capture different light when the sun was out and when it was hiding.

Please enjoy some of my favourite photos from that day.

Thanks for having us chef Elliot and Laura! 🩷

Happy 7th birthday to my business baby! 🥳

It’s a big day over here. Not only is the business babe 7, but she has a new name, as most of you have seen by now.

I feel like this milestone is the most special so far because I’ve been wanting to incorporate my Greek roots for a long time but struggled to truly find a way. I asked myself, how could I find a name that encompasses everything I’m trying to say? Then I said oh girl, you will not find it, it will find you.

And it did. 🥹

Made of Philo. 💙🇬🇷

Philo is short for a Greek word philotimo (also could be a play on phyllo pastry hehe). Literally translated, philotimo means love of honour. But, its meaning runs a lot deeper than that and is sometimes hard to fully explain.

It’s like a feeling and a way of life for the Greeks. It’s something that involves many virtues like pride in family, pride in community, pride in self. These virtues are expressed through ones actions and how they live their life.

Reflecting on the last 7 years of my business (and also my whole life really), I can truly say I live and breathe philotimo. It’s in my DNA. 😉 We never spoke of the word growing up, in fact I just heard the word a few years ago on a cooking show. But, now I can see how it was felt, shown and taught to me by my family.

I take so much pride in my work and always vow to share the good, the bad and everything in-between. And doing the right thing has always been at the top of my list. 🫶🏼 It brings me so much joy to share my love of food and cooking with all of you. I especially love chatting through comments and DMs. 🤗🤗

I could go on and on but I will say, thank you for being here and witnessing my business evolve over the years. We have been through a lot together! 💙

Xoxo,
Tina

Shoutout to my girl @laceandconfettistudio for creating my beautiful logo and branding kit. You always bring my vision to life - especially with the laurel leaf! 🤭💙

(recipe at the end of this little love note 🇬🇷💙)

It has been two years since my sweet Papou (grandpa) left this earth. 🕊️❤️

While he’s not physically here anymore, I feel his presence constantly. There are signs everywhere. Cardinals, angel numbers, random dimes, familiar scents, tastes, etc.

Just today at lunch, I was eating a steak and it instantly took me back to my childhood eating super well done T-bone steaks at my grandparents house. 😂

While I was a super picky eater as a kid (I wouldn’t dare touch this salad), I am now really appreciating all of the wonderful memories sitting at the kitchen table surrounded by my family and some of my now favourite Greek foods. 💙

My name, Made of Philo, is a play on the word Philotimo. Literally translated, it means love of honour. It is like a feeling and a way of life for the Greeks. It involves many virtues like pride in family, pride in community, pride in self. These virtues are expressed through one’s actions and how they live their life.

I have always been proud to be Greek but I’ve been really feeling it in the last couple of years. There is just something so special about my culture that I want to keep unravelling. Maybe it’s my Papou guiding me along the way. ❤️

I hope you’ll stick around for more. 💙

Ps. This is the best salad - horiatiki salata. There is not much of a recipe to fully follow because it’s pretty rustic but here’s a little break down:

1-2 large tomatoes, cut into wedges
1/4-1/2 cucumber, chopped (you can also peel them and cut them into rounds)
1/2-1 green bell pepper, sliced
1/3 cup sliced red onion
1/3 cup kalamata olives
1/4 cup extra virgin olive oil (plus more to drizzle on top)
1-2 tbsps red or white wine vinegar (I used white here)
Salt
Oregano
Big block of feta!

Add all of the veggies + olives to a bowl. Then, add the olive oil, vinegar, oregano and a generous pinch of salt. Toss to combine.

Add the feta on top - don’t crumble it! Then sprinkle with more oregano and another drizzle of olive oil. Serve with some bread to dip in the bowl after (the best part 🤭).

I love photographing yogurt parfaits. 🤭 I just love the different textures. 😍

This is the mixed berry parfait from @bluebirdbistroelora. They use a house-made blueberry sauce and it’s soooo good. Had it as a snack after I took photos of it. 🤭 I truly have the best job! 🤗 by @tinagravalos

CHEWY BANANA PEANUT BUTTER COOKIES WITH CHOCOLATE & CRANBERRY

These chewy banana peanut butter cookies are the kind of easy cookie recipe you’ll want to make on repeat.

Made with ripe bananas, creamy peanut butter, oats, maple syrup, chocolate & dried cranberries, they’re soft, chewy and gluten-free (when you use certified gluten-free oats).

I love recipes like this because they’re simple enough for a weekday bake but still feel like a little treat.

Save this recipe for the next time you have ripe bananas sitting on your counter!

*Makes 9 - 10 cookies

INGREDIENTS:

❀ 2 bananas (medium, ripe)
❀ 1 egg
❀ 1/2 cup all-natural peanut butter (smooth and runny)*
❀ 1/3 cup pure maple syrup
❀ 2 cups certified gluten-free oats (divided)
❀ 1/3 cup dried cranberries
❀ 1/3 cup chopped chocolate (I used a chocolate bar. You can sub chocolate chips)
❀ Flaky salt

DIRECTIONS:

1. Preheat the oven to 350° (175°C) and line a baking sheet with parchment paper.

2. Add half of the oats to a blender and blend until it resembles flour.

3. In a large bowl, mash the bananas until mostly smooth. Some pieces of banana are okay!

4. Mix in the egg, peanut butter, and maple syrup until smooth. Then, stir in the oat flour until well combined.

5. Lastly, mix in the remaining oats, cranberries, and chocolate.

6. Using a cookie scooper or a spoon, scoop about two heaping tablespoons of the batter for each cookie onto the baking sheet. Use the back of a spoon or the scooper to flatten (they will be sticky, but that’s okay).

7. Bake for 12 to 14 minutes or until slightly browned.  Remove from the oven and sprinkle the flaky salt onto each cookie. Cool for 10 to 15 minutes before eating.

Enjoy!

NOTES:

*You can substitute almond butter or cashew butter for the peanut butter. by @tinagravalos

ROASTED RED PEPPER & TOMATO SOUP

It’s still summer over here but the garden is sadly winding down. I have a lot of tomatoes left so I wanted to whip up this soup!

This kind of soup is super easy to make it and comes together pretty quickly.

I made croutons with sourdough but my favourite way to eat this soup is with a grilled cheese sandwich and then you dip it in. SO GOOD!

Here’s the how to:

For the soup:

2 medium red bell peppers (seeds removed, chopped)
1 cup grape or cherry tomatoes
2 small/medium heirloom tomatoes (chopped)
2 roma tomatoes (chopped)
1 small yellow onion (chopped)
1 leek (tops removed, chopped)
2 garlic cloves
1-2 tbsps extra virgin olive oil
Pinch of salt, pepper and oregano
2 cups beef bone broth (you can use chicken or veggie broth here) - I used @kettleandfire
1/3 cup basil leaves

Preheat the oven to 400°F (205°C) and line a baking sheet with parchment paper.

Add all of the vegetables and drizzle the oil, salt, pepper, and oregano all over. Toss and then spread out into an even layer.

Roast for 30 to 40 minutes or until the veggies are slightly charred and blistered.

Add the roasted veggies to a large pot and stir in the broth and basil leaves. Use an immersion blender to blend until smooth or add everything to a blender for an even smoother soup.

Warm up the soup in a pot and then top with the croutons!

For the croutons:

1 slice sourdough bread (cut into small pieces) - this is for once serving so if you’re going to be serving more than one bowl, add more bread
1 tsp extra virgin olive oil
Pinch of salt, pepper, and oregano

When you take the veggies out of the oven, place the bread pieces onto a clean baking sheet and drizzle the oil, salt, pepper, and oregano all over.

Bake for 5 to 10 minutes or until slightly crunchy.

Add to the soup and enjoy!

Latest obsession: these cuties. 🍎

Peanut butter
Honey
Cinnamon
Chopped chocolate
Flaky salt (always)

Slice the apple into rings and core each piece. I have these little fruit and veggie cutter shapes (that I mostly use for work) that I used to core each piece. Today was hearts. 🤭 by @tinagravalos

BANANA PB & J DATES

You can’t really mess this recipe up, it’s super easy, I promise!

It’s one of those measure with heart situations, my favourite. 😂

How to:

* 10-12 Medjool dates, pitted
* Peanut butter
* Jam of choice (I did @stdalfour strawberry jam)
* 1 banana, sliced
* Chocolate - I used about a 1/4 of a chocolate bar (I used @altereco_foods chocolate!) and melted it with a little bit of coconut oil using a double boiler method
* Flaky salt

Use a cup or press the dates flat onto a baking sheet.

Top each with peanut butter, jam, and a slice of banana.

Drizzle the chocolate onto each (I also left a few without chocolate) and top with flaky salt.

Freeze for about 10 minutes.

That’s it!

Enjoy! 🩷 by @tinagravalos

SALTED CARAMEL COLD FOAM LATTE

Ok so this is my version which I will say, I mostly measure with heart! 😂 Obvi, it’s not like the full on salted caramel experience from the coffee shop but it’s giving the vibes of it. 🤭

Also, fancy glasses are a must. How cute is this one!? 🧿 Had to buy these because, if you know, you know. 🇬🇷 - from @homesensecanada

Fill a glass with lots of ice. Then, to a small cup or whatever you use for hot coffee, add some maple syrup (about 2 tsps), vanilla (about 1/4 tsp to 1/2 tsp) and a pinch of salt (don’t go too crazy, we’re not looking for this to taste like the ocean).

Add two shots of espresso in there then stir.

Pour over ice. Then, froth some cold milk (add vanilla if you want) and pour it over the coffee.

That’s it!

THREE INGREDIENT STRAWBERRY ICE CREAM

First time trying this so you’re seeing it in real time. 🤭 spoiler alert - it worked! 😂

It’s SO easy! And omg the flavour. So simple but SO good.

Here’s the how to:

2-3 cups fresh strawberries (stems removed) - depends on much strawberry flavour you’re into!
500ml 35% whipping cream (I used @organicmeadow)
2-3 tbsps cane sugar - you can do more or less

Mash the strawberries with a fork or whatever you have on hand for mashing.

Pour the mashed strawberries along with their juices into the bowl of your mixer.

Add the sugar and cream. Mix until it resembles whipped cream.

Pour the whipped goodness into a freezer safe container and spread out into an even layer.

Cover and freeze for at least three hours or until set. I froze mine overnight.

Before serving, let it sit out for awhile. I’m talking 20-30 minutes. Because it’s homemade like this, it will take longer to thaw. This is especially true if you freeze it overnight. I know, it’s hard to be patient…but you can do it! 🤭

Serve and enjoy! 🩷 by @tinagravalos

I had the pleasure of taking photos for @bluebirdbistroelora. From the moment I walked in, I was in awe of the brick (and stone) walls! I love that look so much. So much character. 😍

Elora is such a beautiful town with so much history. Beautiful buildings everywhere - and of course, so many local gems, like this one.

It’s the perfect place for a road trip. Make sure you stop here for a bite and a delicious drink. ☺️ by @tinagravalos
