Shaoxing Sherry Cobbler was inspired by a dinner in Shanghai where my mother-in-law poured me an 18-year-aged Shaoxing wine served with fresh ginger and salted dried plums.

What I had always thought of as little more than a cooking ingredient suddenly revealed itself as one of China’s great drinking traditions: layered, savory, and deeply expressive.

We built the drink through the structure of a sherry cobbler, pairing aged Shaoxing with Amontillado and Fino sherries before weaving in raspberry, ginger, salted plum, and umeshu. Served over crushed ice with li hing mui, it‘s bright, savory, and unexpectedly refreshing.

Aloha Highlands began with the night Mercury and I met.

We were sitting at a bar a few blocks from Tin’s. I was drinking a Penicillin when she walked in, recognized the cocktail immediately, and ordered one herself. I remember having the unmistakable feeling that my life was about to change.

When we created our own interpretation of the Penicillin, we went back to its roots: honey, ginger, and citrus, flavors drawn from an old Scottish cold remedy. Those same ingredients also feel completely at home in Hawaiian cooking—an unexpected connection between places separated by half the world.

That correspondence felt familiar to us. Like Mercury and me. Like Shanghai and New York. Like so much of what became Tin’s.

Clarified with milk, the drink becomes rounder, brighter, and quietly transportive.

Sometimes the greatest connections are the ones you never expected to find.

New York, by way of Shanghai.

TIN‘s is our attempt to put two cities we love in conversation with each other — in the food, the drinks, the room, and all the little things in between.

Tin’s (@tinsnyc) is the new three-story Shanghai-meets-New York destination bringing something special to the Lower East Side. 🥟 From partners Philip Dizard (@philipdiz ) and Mercury Tin (mercury_ty), it is centered around Shanghai’s beloved Sheng Jian Bao, pan-fried soup dumplings. Upstairs is Tin’s Shanghai Diner, designed to feel like a neighborhood spot you might stumble into in Shanghai, serving up comforting Shanghainese classics. 🥢

Below, you will find Tin’s Bar, a more intimate cocktail experience with personal, narrative-driven drinks, plus Tin’s Dream Room, a private dining space with a distinctive New York-meets-Shanghai vibe. 🍸 The cocktail program prioritizes resonance over novelty, with thoughtful, memorable drinks inspired by the founders’ ties to both cities. Here is the best part: the founders and Chef Justin Choung even traded their honeymoon for early-morning shifts at a Shanghai dumpling shop to master the craft.

A 10,000+ km Voyage: When Chinese Design Takes Root in New York | TIN's Bar Design

Congratulations to @tinsnyc on the grand opening! 🍾✨ (Now open at 109 Ludlow St, New York, NY 10002 TIN's)

Since August 2025, we have poured our hearts into shaping the space and brand identity for @tinsnyc.

From spatial layout and crafting the visual identity from scratch, to carefully selecting every material and furnishing, this project became a dual-city romance—where 1930s New York modernism meets 1990s Shanghai nostalgia.

Every material and fabric handpicked in China, along with every design detail, weaves together the avant-garde spirit of New York’s Art Deco aesthetic with the intricate allure of Shanghai heritage, creating a cross-cultural urban rhythm. Crossing 12,000 km across the globe, our design team made frequent visits to New York—working through time zones and refining every construction detail—to bring our design vision fully into reality, blooming into fruition in July 2026.

Conceived on paper in China, reshaped into reality in New York. From precise prototyping and fabrication by artisans in Chinese workshops to crating, ocean transport, and seamless on-site installation in NYC, we built a bridge between two cultures through design and craftsmanship.

Today, a space that merges the warm intimacy of Shanghai’s Shikumen alleyways with the vibrant nightscape of New York has officially taken root.

Wishing @tinsnyc roaring success, and may everyone who walks through the door find their own cozy corner in this ocean-crossing sanctuary.
