Where it all began? People always ask me where my love for food came from. So, I’m going to try to show you through the foods that are cemented into my mind. Foods from my life. I think this may be one of my all time favourites, maybe in part because of the memories it gives me but also because it’s beautifully simple and delicious. I feel it only appropriate to call it “Mum’s microwave cake” Recipe Equal weight: - eggs (weigh these first in the shell) - flour (self raising OR plain with 5g baking powder per 100g) - sugar - butter - 1tsp vanilla extract Method: 1. Combine all ingredients a bowl until smooth 2. Top with a couple tablespoons of jam or golden syrup 3. Microwave until the batter stops growing and is just slightly shiny on top. Start with 2.5 minutes and burst for 30 seconds at a time until cooked. Keep an eye on it while cooking. 4. Leave to stand for 5 minutes while you whip up some @birdsinstantcustard for the most authentic experience I hope you try this, and if you do, I hope you love it #baking #gbbo #cake #food by @tjstable

Tiramisu crepe cake Recipe below ⬇️ All made on my new @smeg_uk hobs, without the usual smoke clouds due to some serious extraction. My precious hobs haven’t worked properly since we moved in 4 years ago, and the extractor we inherited was pretty busted up so it was useless. BUT that had made us appreciate just how amazing these pieces are, and I personally love the look of stainless steel in a kitchen 🙌🏼 Recipe: Crepe recipe 550 ml milk 5 large eggs 70 g butter (melted) 1 tsp vanilla extract 2 tsp coffee extract 75 g caster sugar pinch salt 150 g plain flour 60 g cocoa powder Method Combine dry ingredients in a bowl Combine wet ingredients in a separate bowl Whisk together and leave to rest for 30 minutes Fry in a very small amount of butter creating evenly sized crepes until all the mixture is gone Leave to cool before assembling Mascarpone cream recipe 25ml coffee liqueur 1 shot espresso 4 large egg yolks 100g Caster Sugar 45g light brown sugar 350g Mascarpone 300ml Double Cream Method Whip egg yolks with sugar Add mascarpone and combine Fold in liqueur and espresso shot Whip double cream and fold into egg yolk mixture Assemble Layer crepes with the mascarpone filling and a small grating of dark chocolate until all crepes are used up Pipe some of the filling on top to decorate Dust with cocoa powder, grated chocolate, and roasted coffee beans, or whatever you like. Leave to set in the fridge overnight before slicing #gifted #baking #cookingongas by @tjstable

Nanny Mo’s Apple and Cinnamon cake One of the greatest foods from my life. This is everything a cake should be, none of the extra fluff. It’s soft, sweet, and has a wonderful textural contrast with the baked apples and cinnamon sugar that stays crispy on top, and turns into gooey pockets of flavour as it sinks during baking. An iconic cake from an iconic woman. Recipe: Apple cake Wet ingredients - 150g soft light brown sugar - 2 large eggs - 1 tsp vanilla extract - 120 ml vegetable/avocado oil - 120 ml Greek yogurt Dry ingredients - Pinch salt - 1tsp cinnamon - 2 pink lady apples, peeled and roughly chopped - 1/2 tsp baking soda - 2 tsp baking powder - 210g plain flour Cinnamon topping - 50g light brown soft sugar - 1 tsp ground cinnamon - 1 tbsp unsalted butter, melted - Pinch salt Sugar glaze - 30g icing sugar - 1-2 tablespoons water or milk Method 1. for the cake, combine all wet ingredients in a bowl and all dry ingredients in another. 2. When both bowls are fully mixed, combine the two and mix until there are no flour clumps. Avoid over-mixing. 3. Mix together the cinnamon sugar topping ingredients in a small bowl. 4. Pour your cake mix into an 8 inch cake tin and sprinkle the cinnamon sugar mix over the top. 5. Bake at 160 for around 30-45 minutes or until a toothpick comes out clean. It will brown nicely across the top of the cake when done. 6. Leave to cool almost completely on a wire rack. 7. Combine icing ingredients and pipe/drizzle over your chilled cake. The more you add, the sweeter it will be. I only add a small amount but feel free to glaze the whole cake if you like. 8. Serve the first slices while still a little warm. 9. Thank Nanny Mo for sharing her recipe with the world 🙏🏼🙌🏼 by @tjstable
