Autumn baking continues with Pecan Crusted Sweet Potato Pound Cake. A rich, moist, and subtly spiced pound cake made with roasted sweet potato, topped with a crunchy maple syrup–infused pecan coating. The flavour was great, but the texture didn’t turn out quite as well as my test cake (see 2nd set of pics). Next time, I won’t make the sweet potato–buttermilk purée in advance, as I think it affected the texture of this bake for Cake Day. Adding this recipe to my remake list, maybe year 15 can be redemption theme 😂 Recipe by @kingarthurbaking by @torontoyeee
