Bocuse d’Or Goldwinner weekend 🏆

This October, the Norwegian fjords become the setting for an extraordinary culinary weekend with Bocuse d’Or Gold Medallist Brian Mark Hansen and Union Øye’s Executive Head Chef Nicklas Skov.

A rare meeting of two chefs, two culinary perspectives, and the extraordinary nature of the Norwegian fjords.

Brian Mark Hansen has spent decades building one of Denmark’s most celebrated culinary careers. In January 2023, in Lyon, he stood on the top step of the Bocuse d’Or podium.

His winning menu, inspired by the fairy tales of Hans Christian Andersen, received unanimous approval from the jury.

Between the dinners, explore the autumn landscape on a complementary guided hike in the Sunnmøre Alps, unwind in the fjord sauna, and enjoy the historic surroundings of Union Øye.

Our executive head chef, Nicklas Skov, welcomes Brian and you for a culinary weekend in the fjords of Norway.

Winter transforms the mountains above Øye into some of the finest ski touring terrain in Norway, routes that have drawn skiers and climbers here for well over a century. Whatever your level, our guides will find the right route for you, from gentle snowshoe trails to serious summits. On the right day, it's even possible to ski from a peak straight down to the fjord and return to the hotel by boat.

And when the legs need rest, or the weather closes in, the house settles into its winter self. The fires are lit, a game of snooker waits in the library, and time simply moves at a different pace. Winter here is as much about the warmth within as the cold outside.

Christmas at Union Øye is celebrated the way it always has been in Norway, with candlelight, good food, and the particular quiet that only comes when the mountains are deep in snow. Festive dinners, homemade cookies, storytelling by the fire, and a programme of tradition unfold across the festive Christmas days.

Enjoy slow days with a puzzle by the fire, a game of snooker in our Gameroom, an afternoon in the library, or a long walk in the fresh air before returning to the warmth.

On a clear night, the northern lights might even make an appearance over the fjord.

From Union Øye, a private fjord cruise can take you to two of Norway's most extraordinary fjords — each with its own bucket-list-worthy beauty.

Sail Hjørundfjord right from our own doorstep, mountains rising steep and close on either side.
