The case is calfskin. Full-grain, black - not charcoal, not midnight, black. It’s cut to the bottle, so the shoulder sits where the shoulder sits and nothing shifts in transit. There is no clasp. There is no hinge. There is no way in.

Gloves first. Always gloves. The leather takes a fingerprint and keeps it.

The blade lives in the drawer beneath. Carbon steel, replaced every fourth bottle whether it needs replacing or not. You draw it down the centre seam in a single pass. If you have to go twice you weren’t paying attention, and I am always paying attention.

Underneath: Tignanello. The 2022. Antinori put the first one out in 1971 as table wine, deliberately, because the rules were wrong and they knew it. The family has been at it in Tuscany since 1385. Twenty-six generations.

Valmont tells me what to order. I don’t read the list. I don’t ask the room.

The case tells me nobody else is getting to it.
