SURPRISE ANNOUNCEMENT — @verdurepdx IS STAYING AT MALPRACTICE 🌱

What started as a rotating kitchen residency was supposed to come to an end. Sometimes, though, three months just isn’t enough.

You all loved Verdure — and so did we. We couldn’t just let them go.

Beginning in September, Verdure PDX is officially continuing at Malpractice every Sunday from 4–8 PM.

Throughout the residency, Adolfo’s contemporary vegan cooking quickly became a favorite at Malpractice, with a constantly evolving menu built around seasonal, locally sourced ingredients. Seeing how much you all embraced Verdure made us realize we weren’t ready to say goodbye either.

“I’ll continue to highlight seasonal ingredients on Sundays, and I’m grateful for the opportunity to continue doing so.”
— Adolfo, Verdure PDX

And with that, we’re officially adding another day to the Malpractice week.

VERDURE SUNDAYS BEGIN IN SEPTEMBER 🌱

EVERY SUNDAY
4–8 PM

MALPRACTICE IS NOW OPEN
WEDNESDAY–SUNDAY

MENU DROPPING SOON. STAY TUNED. 🌱 by @verdurepdx

i wanted to introduce myself since i see a lot of new faces.

my name is adolfo tigerino and I’m the person behind verdure. the reason i chose the name is because it means intense greenery and in italian it means vegetables. also, the word isn’t too far off from the spanish word for vegetables; verduras.

i loved the idea that it had the double entendre and multiple pronunciations. and with the overall goal of putting vegetables in the forefront, i wanted you to realize what was in store for you.

i really wanted to focus on highlighting seasonal pacific northwest ingredients. I really embrace root to stem cooking where i utilize the entire vegetable or fruit, and reduce as much waste as possible.

my goal is for you to experience vegetables in ways you have not encountered them before. to get you excited incorporating more vegetables and fruits in your lives from our local community.

i lean heavily on familiar dishes which is my favorite way to introduce foraged ingredients or a specific ingredient grown here.

ultimately, i want all of us to make the connection on where our food comes from by exploring what our region has to offer through seasonal menus and discovering something new.

lastly, i want to thank you for coming out to show your support and to try these seasonal menus.

There’s a new must-try vegan pop up in Portland.

@verdurepdx has taken up residency at @chubbybunnypdx for dinner Thursdays through Saturdays.

The current menu features vegan takes on arancini and basque cheesecake, as well as okra gnocchi, charred nardellos, and risotto.

You can also catch Verdure popping up at @malpractice.pdx on Sundays.

The secretly vegan staple Chubby Bunny is also under new ownership, with Alex and Destin taking the wheel at the food truck. Visit them for some incredible vegan sandwiches.

You can of course enjoy your good vegan eats at @alberta_carts, and there’s dreamy patio seating @byeandbyeportland (highly recommend their BBQ Brussels Bowl and crispy tofu cutlet sandwich)

i’m pretty ecstatic and grateful to alex & destin for allowing me to use their space @chubbybunnypdx to continue to highlight seasonal ingredients. i will be at the truck thursdays - fridays from 5pm-9pm (right next to @byeandbyeportland).

hope you get to stop by the truck some time. i’ll post a schedule on where i’m at all month long!

this first menu at the truck added nardellos with a coconut labneh (final week of nardellos, once I’m out there’s no more!) and due to popular demand from my malpractice menu i made the okara gnocchi as well that’s tossed in a creamy cauliflower nage.

also, risotto is such a comforting dish. i had to bring to make one for this cold weather we’re finally having. it’s a beautiful variety of squashes with chanterelles and topped with pesto and hazelnut parm.

i will be rotating my menu every other week or sooner depending on seasonal ingredients.

thanks for your continued support as i continue to do pop ups. see you soon!

Our dessert reveal is here for our pop up on Monday, Oct. 19 @norahpdx (Alberta location). Reservations available via link in bio.

The dessert is a PNW “Spumoni (a Naples molded gelato dessert with a variety of flavors).”

It’s everything we love about a spumoni with a fun spin. It will have hazelnut chocolate dacquoise, cherry geleè, and pistachio mint ganache.

We can’t wait for you to taste it!

Our autumn pop up is this upcoming Monday, Oct. 19, @norahpdx (Alberta location). You can reserve your spot via link in bio.

We’re going with some comforting fall vibes with our ciambotta d’autunno and tortellini in brodo.

Nothing says more cozy than a delicious slow cooked stew with astiana tomatoes, honeyboat squash, cucuzza, carrots, pumpkin, butternut and honeynut squash. It’s a beautiful way to celebrate the fall season.

Our tortellini in brodo is a creamy delight in a delicious slow cooked vegetable broth.

We can’t wait to see you for this one and for dessert we have a special surprise for you. You’ll just have to see.

We’re popping up on Monday, October 19 @norahpdx (Alberta location). Reservations on link in bio. We hope to see you there!

Although we try not to repeat dishes, some dishes we fall in love with that we do some tweaks here and there to give a fresh feel to it.

Like when we kicked off our pop up series we did an amuse-bouche of a cappelletti in brodo di carote (second photo).

We really wanted to revisit pastas in broth for our fall pop up.
Since they’re cozy delicious and bright. You can’t go wrong with it.

This is our tortellini in brodo. The tortellini are stuffed with a soy ricotta and served with a slow cooked vegetable broth. We will top it off with a hazelnut parm.

If you haven’t dined with us before, we have a set of five courses but with some surprises in between. We are absolutely ecstatic over this menu and can’t wait for you to try it.

We pop up on Monday, Oct. 19 @norahpdx (Alberta location). We’re taking reservations for 5pm or 8pm via link in bio.

We’re absolutely thrilled to show you what the season has to offer.

We’re bringing ciambotta d’autunno which is a beautiful slow cooked stew made of cucuzza, potatoes, carrots, astiana tomatoes, san marzanos and a variety of seasonal squashes (pumpkin, honeyboat, honeynut, and butternut squashes).

It’s a perfect stew to celebrate the changing seasons from summer to autumn.

We really wanted to do a little throw back to one of our first pop ups where we did cappelletti in brodo di carote as an amuse-bouche.

So we’re bringing a tortellini in brodo. It’s a soy ricotta stuffed tortellini served in a light slow cooked vegetable broth. Topped with hazelnut parm.

It’s creamy, light, nutty and savory goodness. We look forward to you trying it.

We’re also going to be bringing a fun oreganata. We’re doing it with chanterelles. We’re coating them in breadcrumbs and oregano then cook them till golden brown. Serving it over a creamy cauliflower purée. It’s earthy, creamy, and crispy. So good.

As for dessert. We’ll let you know in the days leading up to it.

If you haven’t dined with us before, we love to throw a couple fun surprises between courses to continue the good times and celebrate the season.

Hope to see you @norahpdx on Monday, Oct. 19.
