What a way to spend a Sunday!

Natalie Fryar @bellebonnetas and Hugh McCullough @wellingtonandwolfe joined us at Short Grain @shortgrainbymb for a long lunch with Martin Boetz @martinboetz, for a fabulous afternoon pairing Northern Tasmanias stunning wines and Martys incredible Thai food.

We kicked off with Merimbula rock oysters with red chilli nahm jim and crisp eschalots, served with a spiced chicken skin cracker, and a grilled prawn with peanut relish and green mango, alongside the newly released Bellebonne Bis Blancs NV. Fresh, bright and brilliant with the chilli and lime.

The eggnet of crispy pork and caramelised coconut, and the raw scallop with green chilli, ginger and trout roe, got two wines. First the Bellebonne Vintage Rosé 2023, then Hugh's Wellington & Wolfe 2025 Riesling, all tangerine and grapefruit with that lovely racy Tasmanian acidity cutting through the ginger and heat.

Then the green curry of kingfish and a braised beef rib with black vinegar hot and sour salad, with the Evenfall Pinot Noir 2024 @evenfallwines. The Pinot with green curry worked beautifully with the crunchy red fruits elevating the aromatics of both dishes, and the soft silky tannins matching beautifully.

To finish, tropical fruit and Short Grain's coconut sorbet with the Bellebonne Vintage Cuvée 2022, which was a pretty special way to end things.

A huge thank you to Martin and the whole Short Grain team, to Natalie and Hugh for coming up from Tassie, and to everyone who joined us. We'll definitely be doing this one again!

Patience is key to Wellington & Wolfe. Time on skins, time to ferment, time on lees and finally time in bottle.

2026 is in the middle of its journey- resting on lees before bottling in a few months. Regular tasting and managing is key to bringing you the best Riesling possible…
