👀 November Monthly: Pie Sneak Peek 👀

November is bringing something dreamy to our dessert case.

This one's extra special to our baker, Julia. Inspired by a pie her dad made during her childhood, she's bringing a little family nostalgia to Whatcha Smokin? BBQ.

Think rich, chocolatey, light as a cloud, and a little taste of childhood happiness.

Any guesses what Julia's whipping up?

Our November Monthly Pie makes its debut Sunday, November 1st.

BBQ 101, Y'ALL: FATTY VS. LEAN BRISKET

We recently got asked what makes fatty brisket fatty and lean brisket lean. Well, besides the obvious, there's actually a little more to it.

LEAN BRISKET (THE FLAT): Comes from the flatter, larger portion of the brisket. It has less internal fat, a firmer texture, and a more uniform slice. But don't let the word "lean" fool ya. It is still plenty tender and juicy.

FATTY BRISKET (THE POINT): Comes from the thicker, more marbled portion. That extra intramuscular fat renders during the smoking process, giving it a richer flavor and a softer, buttery texture.

Same brisket, two different muscles, and two mighty fine ways to enjoy Central Texas-style BBQ.

So, which team are y'all on? Fatty or lean?

BEYOND THE PIT APPRECIATION: THE DOUBLE WIDE

When the tenderloin is bigger than the bun, you know you're doing something right.

Hand-breaded, pounded flat, and fried to crispy, golden perfection. Piled high with lettuce, tomato, onion, and pickles, plus your choice of side. This Iowa classic isn't shy about taking up the whole tray.
