Chef & Baker Henry Awayan, founder of Alameda’s award-winning Whisk Cake Creations, brings his passion for Filipino flavors to the world of baking. From his first cake at age 10 to mastering wedding and specialty cakes at the renowned Katrina Rozelle Pastries & Desserts, Henry’s journey has been one of dedication, skill, and love for the craft.

One of my biggest culinary goals was to write a cookbook. I never imagined that cookbook would be about ube—but looking back, I can’t imagine it being about anything else. How fortunate am I that it was released just as the world was beginning to discover and fall in love with this incredible ingredient.

When I started writing The Ube Baking Book, I had one simple goal—to publish the world’s first cookbook dedicated entirely to ube and hopefully one day see it sitting on a bookstore shelf.

To be standing inside Fully Booked, the Philippines’ largest bookstore chain, seeing my book on the shelves in the country where ube has been grown, cherished, and celebrated for generations… that’s a moment I’ll never be able to put into words.

Ube has always been more than a purple yam. It’s the flavor of childhood memories. It’s family gatherings, fiestas, merienda with loved ones, and recipes lovingly passed down from one generation to the next. It’s part of our culture, our identity, and our history. Its roots run deep in the Philippines—and in the hearts of Filipinos everywhere.

To stand in the Philippines and share my love for ube with fellow Filipinos was one of the greatest honors of my life.

Thank you to @_fullybooked for believing in this book and for hosting such an incredible homecoming. Every conversation, every story, and every signed cookbook reminded me that food has a beautiful way of connecting us—to our families, our heritage, and to each other.
