FIRE 🔥 ALCHEMICAL COOKING with @funky.bacteria as part of @okouka_oslo_akershus in September brought together an incredible bunch of humans to learn about preparing food over flames. Wilder Kitchen had the pleasure to team up with food artist Nicolò Pagnanelli to create an experimental afternoon working with the seasonal plants, the garden and working with his speciality of bread to create decorative flatbreads cooked on the traditional Norwegian tak oven. There’s so much abundance in the garden within the season that the menu became vast yet with one very special flavour that comes from cooking with the element of fire. Carrot caramel sticky “toffee” pudding for @mooretreat in Lofoten this summer. The caramel has been a big hit and with the carrots has the most beautiful colour.

CARROT CARAMEL RECIPE -
300 g carrots, peeled and chopped

100 ml full-fat coconut milk

200 g granulated sugar

60 ml water

50 g vegan butter

1/4 tsp salt (optional)

1 tsp vanilla extract (optional)

Peel and chop 300 g of carrots and boil until soft. Drain and blend with 100 ml of coconut milk until smooth. In a saucepan, heat 200 g of sugar with 60 ml of water until the sugar dissolves and turns golden amber. Carefully whisk in 50 g of vegan butter until melted, then gradually add the carrot and coconut mixture while stirring continuously. Simmer gently for 5–10 minutes, stirring until the caramel is smooth and thick. Allow to cool before transferring to a clean jar. by @wilderkitchen

That was the theme of this years day long festival curated by @wilderkitchen An on going project to help guests reconnect to nature and share knowledge of the plants. An artist space to explore food, community, collaboration and passing knowledge from one hand to the next.

The incredible day at @losaeter featured Ancient grain porridge and bread with @edona_arnesen , Soil to Paint with @anastasya_kizilova , Ayurvedic wisdom with @osloanneso , Nordic smoke cleansing with @jennyhviding , A Three Sisters Supper cooked by @wilderkitchen and @yomat_oslo and a performance of place by @morefrony

EARTH SCHOOL 🌀 LOSÆTER FESTIVAL 🌀 A.I. - ANCESTRAL INTELLIGENCE SCHEDULE

Excited to announce the artists and practitioners sharing their wisdom as part of this years theme of A.I. - ANCESTRAL INTELLIGENCE.

GRAINS of WISDOM - @edona_arnesen - 10am starts the day with a breakfast of ancient grain porridge and lead a workshop in creating with bread dough which we will later bake in the clay.

SACRED SMOKE - @jennyhviding - 11am Workshop in how to make Norwegian Eimlauga incense bundles and work with native Nordic plants 14.15. Eimlauga performance at 11 and 14. A traditional smoking cleanse ritual.

SOIL to PAINT - @anastasya_kizilova - 11.30am A workshop where you work with the pigments found beneath our feet to create a pallet of possibilities

ROOTS & REMEDY - @osloanneso - 13.00 - Working with the element of EARTH to nourish and restore with wisdom from ancient wisdom of Ayurveda

SEEDS of POSSIBILITY - @aho_architecture_design - 15.00 - AHO Student exhibition sharing their research on the urban agricultural community of Losæter and how to create more places for plants and community in cities.

The THREE SISTERS Supper - @wilderkitchen and @yomat_oslo - 16.00 - A shared long table of food to celebrate the wisdom of the plants and indigenous growing wisdom.

A Story of SOUND @morefrony - 16.00 - A performance with sound artist working with the land and environment of Losæter

FULL MOON GATHERING - @liselli_art_and_scenography - 17.00 - The transitional gathering to finish the season of full moon events with an artistic exploration of connecting to the ancestors through the trees.

EARTH SCHOOL 26 🌀 A.I - ANCESTRAL INTELLIGENCE

Learning for the past to create a brighter future.

Also this years LOSÆTER FESTIVAL 🌀 The moment to bring in the harvest and celebrate the season of urban agriculture in the heart of Oslo.

Workshops, art, food and performances held throughout the day and full schedule to come.

Pre-festival provided on Friday night by our friends at @urtealliansen_oslo & @wildhueslab who will teach a workshop on sourcing the colour blue from nature and Saturday nights event curated by KunstLab with artist @liselli_art_and_scenography helping us connect to the ancestors as part of the closing season of Full Moon gatherings.

All FREE and inclusive to the public as we have funds made available from @sparebankstiftelsendnb and @oslo.kommune to help bring this to life.

Back in 2025 Wilder Kitchen hit the road and moved location from Oslo up to the North of Norway for a season to run a food truck between the mountains and sea of Lofoten.

The food truck was no ordinary consumer stand. It was also involved an evolving art gallery, a space to sit by the fire, and an ‘Adventure Club’ where guests were invited to forage, hike and join for pop up food events.

During this time we had a guest, @helenemoo ! Who was inspired enough to invite Wilder Kitchen to cook-create as part of mooretreats. We made magic in Olden back in June 💫 and now we are back next week to where it all began, Lofoten taken in Lofoten, Norway by @wilderkitchen
