We've had a packaging heavy 2026, but as cooler weather hits, we'll be brewing again to refill barrels. Over the next few weeks, we'll brew some Belgian influenced beers, some classic farmhouse and perhaps find time for some rare cask :) by @wildernessbrew

Our friends @cafebeermoth came over in 2023 to brew a fun little raw ale. It turned out great, and it's just won big at the inaugural @welshbeerprize awards 🎈 🏴󠁧󠁢󠁷󠁬󠁳󠁿 🎈

CARBONIC MACERATION

A new batch of our friendly little Apricot sour (Love Me Anyway) on the way soon; 100% British apricots, carbonically macerated and fermented with wild yeast, blended with a sour golden base beer

We put whole, undamaged apricots into a sealed tank, purge it of all oxygen using CO2 and then wait. The fruit starts to ferment in its own skin before eventually breaking open - in our photo here, you can see the fruit starting to become fizzy 🤯 fizzy apricots by @wildernessbrew

From our collapsed barn up at the orchard, we have a load of beautiful welsh slate. For later in the year, we've been thinking about a traditional slate fermented bitter - fermented in our square vessel, potentially fully open fermented, and then released and drunk sharpish by @wildernessbrew
