Crushed us this weekend. Thank you everyone that came out and sorry to those who were a tad bit late and missed out. Lots of changes happening since we’re constantly improving everything we do at Wildfire.

Have a great week 🕺🕺🕺

Our Peking Duck is back next week. Ducks are hanging in the walk in to dry that skin out. Our process takes around 10-14 days. But now that we have a direct heat pit we can push these guys to 7 day hang.

Pre-orders are open baby 🕺🕺🕺

We’re all huge fans of fried chicken here, we don’t push fried items too much since it creates a bottleneck during busy periods of service.

These are too good not to sell. Big ass chicken wings, marinated in kaffir lime, lemongrass, chilli and fish sauce. Deep fried lightly then into the smoker to cook to temperature. Then we dress it with @laam.thai Thai fish sauce caramel, fried shallots, coriander and lemon zest.

2 days of prep and we’re selling these fellas for $19 a portion this weekend.

Bloody bargain.

Brisket Patty Melts on the specials this menu. The whole crew tried them and were feeling it’s a strong contender to make it permanent.

Pull up and grab a patty melt this weekend ✌️
