A glass drum standing alone off the ring road, lit blue from the inside, scattered with circles like someone took a hole punch to the façade. The approach ramp runs dead straight at it and the two concrete walls funnel your eye right up the middle — the building gave me the composition, I just stood where it told me to. Everything around it is black. At this hour there’s nothing else in Amsterdam this shape and nothing else this colour.

Rethymno at the hour nothing is urgent. Empty café chairs lined up under the palms on the seafront, a lane of Venetian houses with a tattoo parlour and a lobster board, mint-green taverna tables waiting under a tree, a woman in polka dots deciding slowly about a bracelet while her husband waits in the shade. Shutters half-closed, the light hard enough to cut. Nobody’s rushing because there’s nothing yet to rush toward. The old town saves itself for evening.

Heraklion keeps its two harbours side by side. In one, the little painted caïques — orange, red, blue — tied up with nets still drying and a Greek flag on every stern. In the other, Koules holding the sea wall and an ANEK ferry loading for the mainland. Same water, four hundred years apart. The small boats always look like they’re waiting. They’re not. They’ve just already been out.

Three couples, one station forecourt, and the whole grammar of being with somebody written in what their hands are doing. He’s carrying her handbag — black, small, obviously hers — while she carries a blue plush toy pressed to her face like she’s eight years old, and neither of them thinks this is worth mentioning. Two in matching white shirts and backpacks, holding hands, heading in to something that requires white shirts. One in a green polo with a jacket, a bag and somebody else’s things all bundled under one arm while she reads whatever has just come through. And one woman alone in enormous jeans and headphones, under the station clock, keeping her own time. Bijlmer ArenA at the end of an afternoon: everybody between one place and the next, and the small unconscious choreography of who holds what.

Closer now, and the village gives up its details. Taverna Eleni. Zorbas. Kriti Sirtaki. A shopping centre named Labyrinth, which on this island is not a joke but a reference. Rows of straw parasols still standing on the black sand with the loungers underneath them, a few people still in the water, a few more wandering the shoreline with their shoes in their hands. The car park is full. Every terrace is lit and occupied. Behind it all the sandstone hill holds the last of the day’s heat, and above that the sky has finally gone properly dark. This is the hour Matala is actually for. Not the morning with the caves and the cameras — this, when the beach stops being a sight and goes back to being a place where people eat dinner with sand still on their feet.

From up here you can finally see the shape of the place. One curved bay, one strip of tavernas burning amber along the waterline, and the whole sandstone hill rising behind it with the caves still in it. The sky has gone to that ten-minute blue that only happens after the sun has left but before the night commits. And painted along the sea wall, big enough to read from a drone: Today is life — tomorrow never comes. Somebody wrote that here in the sixties and nobody has had the heart to paint over it since. Half a century later the slogan still holds, every single evening, as the lights come on and lay themselves down across the water in long orange bars. Matala doesn’t sell you a philosophy. It just keeps demonstrating one.

A man standing ankle-deep in the sea in printed swim shorts, camera up, elbows out, holding completely still in the only way that matters. He has no idea I'm behind him. I had no idea what he was pointing at. Two people on the same stretch of shoreline at the same minute of the same evening, both convinced the picture was over there — and one of us turned out to be wrong about which direction. In black and white the water loses its colour and becomes nothing but texture, so there's almost nothing in this frame except him and the act itself: the slight lean, the weight on the back foot, the breath held. Every photographer I've ever watched does this exact shape. It's the most recognisable posture in the world and nobody who makes it is ever thinking about how it looks.

Nothing but orange for three-quarters of the frame, and down in the bottom corner, two people on a rock who have stopped doing whatever they came to do. The sun is already gone — that's the last sliver of it, snagged on the ridge, maybe forty seconds of it left. Everything else is what the light leaves behind: the sky going from molten at the horizon to a softer amber overhead, the mountains flattened into one blue silhouette, the sea holding on to a thin gold skin it will lose in a minute. I kept the figures small on purpose. A sunset on its own is wallpaper. A sunset with two people in it becomes an evening somebody had.

Paris crosses the road with conviction. Three frames at three crossings, and in every one of them the light has just changed and a whole cross-section of the city steps off the kerb together. A woman in head-to-toe rust orange, hand on her bag, moving like the zebra stripes were painted for her, and beside her someone in navy shielding her eyes from the same sun. A long white skirt coming over the crossing at Montebello with the cathedral scaffolding still standing behind it. And a green man glowing in the top corner while four strangers who will never speak advance in perfect formation — the woman in the leather coat looking straight down the lens without altering her pace by a single beat. That's the thing about this city. Nobody hurries and nobody dawdles. The light says go and Paris goes, at exactly its own speed.

A Buddhist monk crosses the parvis of Notre-Dame in full ochre robes, a phone in his right hand, sandals slapping the flagstones, laughing at something just out of frame. To his right a woman in a headscarf walks the other way. Behind both of them, eight hundred years of Gothic limestone and the restoration cranes still standing. Nobody in this photograph finds any of it remarkable, which is the entire point. This square has been a place of arrival for the better part of a millennium — pilgrims, tourists, traders, refugees, and now a monk checking his messages in the sun. The stone doesn't mind. The ochre against that grey is the loudest thing in Paris today and he isn't even trying. Colour like that walks past once and doesn't come back.

Sven frames of a city taking a break. Two friends on a wooden bench, one eating something out of a paper wrapper, the other making the face you only make at someone you've known a long time — half complaint, half punchline, entirely unguarded. A woman in green trousers walking a long stone kerb with her cardigan in one hand and her earphones in, going somewhere she's been going for years. A couple crossing cobbles in matched denim, an Opéra National t-shirt, a tote from a café, neither of them trying. And three heads bent over one phone on a granite step, which is how every group decision in this city gets made. No monuments in any of these. Paris does its best work at pavement level, between the things you came to see.

They're both talking at once. That's the whole picture. He's looking one way, she's looking the other, her hand hooked into his arm, and neither of them is listening because neither of them has finished. Paris does this to people — you come out of the métro at Hôtel de Ville into all that Haussmann stone and the plane trees and the free-trial bikes racked up along the kerb, and you start narrating. Around them the city does what it always does: a man in a bush hat going the other way, somebody's leather bag swinging, a hundred people with somewhere to be. In the middle of it, two people arm in arm, talking over each other on a Tuesday afternoon. Nobody looked at me. That's the whole job.
