In March I flew back to London to put on another supper club with Dan and Conor, which feels slightly ridiculous considering I’d just moved back to Sydney, but these nights are always a highlight of the year for me.

We hosted it at Conor’s restaurant @evislondon in Dulwich, with the menu built around our Thailand trip and designed and curated by Dan.

Two sittings, around 40 people, a mix of strangers and mates, all packed in for a pretty special Sunday afternoon.

The standouts for me were Dan’s Massaman curry and the Mor Mu Dong stuffed fish. The fish was easily the most complex and intricate dish we’ve attempted, but also the most exciting to serve up and explain to guests.

Big thanks to the team at Evi’s for all their support 🙏 taken in London, England by @willysaund

Bangkok

An amazing mix of day and night markets, street food, fanging about on tuk tuks and then two pretty incredible dining experiences. One was a supper club @haawmbkk, the other one of Bangkok’s best restaurants @samrubsamrubthai

Most of the shots here are of street food. Some of my personal favourites were miang kham (a beetle leaf wrap filled with a sweet, salty and spicy mix), then mamuang nam pla wan (green mango served with a thick sweet, salty and spicy jammy paste) and khanom bueang (crispy Thai crêpes with a sweet cream and toppings).

I couldn’t love these trips more. We spent our days hunting down small shops, restaurants and little jaunts through local towns. Lucky for me, Dan and Conor have been to Thailand many times and know the spots… bosssshhhhh. taken in Bangkok by @willysaund

Songkhla

Located, on Thailand’s southern coast near the Malaysian border, an underrated spot. It feels very different from the rest of Thailand: quiet, quaint, and with a distinct lack of farangs. The food feels closer to Malaysian cooking than the more Chinese-influenced flavours of Bangkok.

We also somehow missed the biggest flooding in 300 years by two weeks. taken in Songkhla by @willysaund

Old Phuket Town

Last October, Dan, Conor and I embarked on our second food safari, this time to Thailand 🇹🇭 . The next three posts follow our journey from Old Phuket Town to Songkhla, finishing in Bangkok.

My two highlights from Old Phuket Town were pic one, Khao Gaeng, a Thai breakfast buffet built around local herbs, pickles and relishes.

The second was restaurant, Mo Mu Dong. It shows a fairly normal-looking fish, but we sat there scratching our heads trying to work out how they’d made it. Every bone and bit of flesh had been removed, it was stuffed with sausage meat, somehow without a single visible incision, then fried. The following pic shows the inside. taken in Old Town Phuket by @willysaund

Last year, Dan, Conor and I did our first food safari together to 🇹🇷 Three lads marching around smoky, mangal-scented Istanbul, hitting five restaurants a day, eating our way through dürüm, kebabs, pilav, mezze and bowls of soup, staying hydrated on local rakı.

Everything from street stalls serving chicken and rice, to Bourdain’s favourite dürüm spot, to simple red pepper mezze, charcoal-grilled Adana cooked over the mangal and my favourite renowned restaurant Çiya Sofrası.

If you get the chance, I couldn’t recommend it more 👌🏼 taken in Istanbul, Turkey by @willysaund
