What am I drinking these days? Fantastic question.

Tonight I made a Bensonhurst. You ever have one of those? It’s like a Perfect Manhattan made out with its grandparent Martinez. Very dry and slightly herbal. Boozy. Something with cajones, you know what I mean?

Bensonhurst
2 oz rye
1 oz dry vermouth
2 tsp maraschino
1 tsp artichoke amaro

You could do up in a Nick and Nora, I like over one big cube. It’s great for these chillier nights, surrounded by fall foliage. by @wilpetre

The only thing better than spritz season is an autumnal one, and up here in the Catskills we are never short of amazing things to sip.

Featured in the @finderyguide Fall/Holiday 2026 issue is the A’Pear O’Spritz

1 part @stricklandhollowfarm Pommeau
3 parts @seminaryhillny Dry Perry*
1 part Sparkling Water
2 dashes Angostura Orange Bitters
*optional splash of lemon juice

(if your perry is off-dry or sweet, consider a splash of lemon to cut through the sugar)

Build in a bulbous wine glass over ice, stir gently to incorporate. Garnish with a dehydrated apple wheel.

I have said it before and I’ll say it again (I say it in the video too); spritzes should not be measured. The magic is the hand** that makes it.

**Side note: I’ve heard tell of some cheese making nuns in France, still milking the cows by hand. I’ve also heard tell that the taste of the cheese depends on the nun milking the cow. Some milk soft, others hard. Some so hard that the cows sh!t in the milk which “flavors” the cheese. You know what I mean?

Pour this spritz, peep those leaves, and thank me later.

Cellar Report: Cider Journey 2026

A heatwave in spring meant the apple trees started budding earlier than usual. A late April frost was damaging for lots of trees, though our higher elevation meant that we got a slightly later start and avoided the worst of it. Because our season is a bit shorter, we had apples starting to drop in August, so we spent the past few weeks trying different methods to make the most of the harvest.
A huge thank you to some very cool cats in the Catskills: @dear.native.grapes for lending us the crusher and the manual press. @jointventure___ for lending us the jack press (shoutout @ethanhethcote and @goosetits for helping with the transport. And @hubbellfamilyfarms for opening up their cellar and commercial equipment for the last press day. There’s a stereotype that cider people are some of the friendliest folks in the booze world, and these pals lived up to it.
See you in Spring ‘27 with over 35 gallons of hopefully something delicious!

The Chichi Marchi (the house martini)

A signature martini is a nice thing to offer your guests (and spouse). Don’t reinvent the wheel, but play with spirits, proportions, glassware, and garnish to find something that captures your palate and point of view. I’ve played around with these specs for a couple of years and am digging this particular version.

2 oz Fort Hamilton New World Gin
.5 oz Lustau Dry Vermouth
.5 oz Cocchi Americano
2 dashes Angostura Orange Bitters
Lemon and Orange peel garnish (express oils and rim edge of glass before placing)

Saw In the Mood for Love by Wong Kar-wai for the first time in the theater a few nights ago and it’s been sticking with me. Highly recommend if you haven’t already seen.

This is your sign to stop working and eat Basque Nachos.

* Start with good Spanish potato chips, ideally fried in olive oil
* Top with jamón ibérico, Mediterranean olives, piparras (Basque peppers - pepperoncinis will do in a pinch), a bit of oil from the tinned anchovies, and the anchovies themselves
* Serve with Spanish vermouth on the rocks with a lemon peel
* If near a body of water, immediately hop in and float about while you enjoy this one beautiful life we’re given
