While our harvest is showcased best in the kitchen, food isn’t the only thing we grow in the garden. Flowers and pollinators are vital to a thriving ecosystem. And besides that, they’re just simply beautiful. Meet Flamingo Feather. They start in the field under the Georgia sun, and though typically dried in the dark to preserve their color, we hang dry on the porch to get a cream color that glows in the dining room. It’s all these little choices along the journey from soil to table where you’ll find the care of the garden team. by @worldofquercus

At Quercus, we think of the cabins almost like a tasting menu that runs the length of a weekend. Organic linens chosen by people who think about sleep and rest for a living. Lighting that follows the sun and our circadian rhythms. A wood-fired sauna and cold plunge a few steps from the front porch. More than anything, we wanted it to feel like an invitation into our home where your only job is to arrive, relax, and enjoy. We’re so grateful this experience has earned the recognition of a Michelin Key and thrilled to welcome guests this fall and winter. by @worldofquercus

There are stories of treasure underneath the branches of the pecan grove. Goldie, a truffle dog in training, led us across the grasses and undergrowth in search of a particular kind of truffle as part of our never ending search for ways this place might continue to surprise us. While this trek returned empty-handed, we treasured the time and the hunt continues. Thanks to @mushroomclubofgeorgia for the adventure. by @worldofquercus

We are truly honored to receive our first MICHELIN Key.

This news comes as we commence our second year sharing this quiet corner of Georgia, and it’s a testament to the care of each person who shapes the experience here at Quercus. We couldn’t be more grateful for this place, our guests, and our team who have shared in this unforgettable journey. by @worldofquercus

Donabe service is one of our guest’s most unexpected experiences and a wonderful showcase of the garden’s seasonality alongside our preservation program. Fresh vegetables join fermentations and pickles as diners make every bite unique. Intended to be shared and invoke a spirit of community. by @worldofquercus

This weekend we officially welcome guests back to our Fall Season after a summer of growing, harvesting, preserving, fermenting, and preparing. The days are still bright and warm, but at sunset the smell of Fall starts to creep in and sitting outside by the fire doesn’t seem so indulgent at all. by @worldofquercus

A farm stay used to mean a rustic breakfast, a barn tour and a photograph beside the chickens. In 2026 the meaning has shifted. On a growing number of member properties, guests are turning compost windrows, planting cover crops, tracking soil-organic-matter gains and eating meals whose ingredients were pulled from the ground beneath their feet that same morning.

Across the Atlantic in the hills of Georgia, Quercus (@worldofquercus) runs as a working regenerative farm retreat. Food is grown, raised and prepared on site using practices that rebuild soil health and biodiversity, while rewilding work restores native oak woodland and wildlife habitat across the property. The kitchen operates as a circular system — on-site production, processing and composting — so the loop closes from garden to plate and back to soil.

Ceramic fermentation jars bubble away alongside rotary evaporators and a commercial centrifuge. This is our food lab where we’re striking a balance between mastering techniques handed down through generations while discovering new ones using modern technology.

We know we need both working together to get the most out of what the team is growing on the farm and in the garden. New forms of preservation, distillation, and expression to find the essence of what this part of Georgia tastes like.

Guests have the chance to see the laboratory humming to life during dinner service while they experience the dishes born from these experiments … the ones that work of course. by @worldofquercus

Travel was once about discovery. But when every moment is scheduled, there’s often little space left to truly arrive.

Our bodies benefit from slowing down. Even 20–30 minutes of quiet, screen-free time in nature can help us shift out of constant stimulation and into a more restorative state.

What happens when we travel differently? When we give our attention to the land, to culture, to stillness—and allow travel to become less about doing and more about being?

In this editorial, we explore stays that invite a slower, more grounded way of travelling:

Herdade da Cortesia, Alentejo, Portugal (@herdadedacortesiahotel) — Sunrise yoga, lake paddling and organic farm-to-table dining.

Quercus, Rural Georgia, USA (@worldofquercus) — Biodynamic gardens, quiet waterways and soil health education.

Keythorpe Hall, Leicestershire, England (@keythorpe_hall) — Foraging with ethnobotanists and zero-waste kitchen practices.

El Albergue Ollantaytambo, Sacred Valley, Peru (@elalbergue) — Traditional pachamanca feasts and a deep connection to organic farming.

Kasbah du Toubkal, High Atlas, Morocco (@kasbahdutoubkal) — Reached only by foot or mule, encouraging a deeper connection with place and community.

Time of day. Angle of the sun. Shade or light. Warm fire or breeze. A gentle porch swing. Perhaps a dip in the tub. Or even back against an oak tree. Everyone’s idea of the perfect place to sit is totally their own. Called by a good book. The symphony of a grazing herd. Turtles sunning in the afternoon. Curled up in a chair, blanket-wrapped. Or maybe just a quiet moment with coffee in hand and not a care in the world. I guess that’s why we take sitting so seriously. Because there’s few small treasures quite like knowing you found the perfect spot. by @worldofquercus
