DENVER’S NEXT GREAT STEAKHOUSE HAS A STORY TO TELL. 🥂

A first look inside The Stockton Steakhouse, opening December 1st in Denver’s historic Livestock Exchange Building, and I can already tell this is going to be something special for the Colorado dining scene.

An extraordinary restoration of one of Denver’s most storied spaces, where original architectural details, grand chandeliers, rich leather banquettes, and timeless elegance meet a new era of Colorado hospitality.

The history alone is worth experiencing.

A beautiful restoration brought to life by EXDO Development Group, including Kevin Preblud and Andrew Feinstein, whose vision and dedication have helped preserve this remarkable piece of Denver history while giving it an exciting new chapter.

Behind this beautiful restaurant concept is Bryan Dayton, owner and founder of Corrida in Boulder, alongside Executive Chef & Partner Samuel McCandless. Their vision celebrates Colorado’s ranching heritage through exceptional beef, regenerative agriculture, locally sourced ingredients, and a genuine appreciation for the land.

And if you’ve experienced the incredible food and hospitality at Corrida, you already know the level of excellence they bring to the table.

I had the pleasure of attending an intimate preview, and between the beautifully crafted cocktails, incredible food, stunning surroundings, and energy in the room, it was clear that The Stockton is bringing something Denver has been waiting for.

The sophistication. The atmosphere. The history. The hospitality. Every detail feels intentional.

What excites me most is seeing this historic part of Denver come alive with a dining destination that honors its past while bringing a fresh sense of elegance and energy to the neighborhood.

This is more than another steakhouse opening. It’s a beautiful new chapter for Denver dining, and one I cannot wait to experience again.

Meet Samuel McCandless, Executive Chef & Partner of The Stockton.

Growing up in the Intermountain West, Samuel developed a lasting love for beef and the land that produces it. At The Stockton, those two threads come together.

Corrida Cattle Company is the heart of his menu, with Colorado beef raised through regenerative practices alongside exceptional beef from other American producers. Produce will come from Colorado whenever possible, drawing on longstanding relationships with farmers he knows and admires.

For Samuel, working closely with ranchers and supporting regenerative agriculture are central to the restaurant’s purpose.

Join us on Sunday, August 23 for Plant a Seed for Change and enjoy a dish from Chef Samuel McCandless of Corrida. Tickets are available now through the link in our bio.

Samuel’s relationship with food started far from a professional kitchen. Born and raised in Montana, he spent summers in Redwood City, California, cooking alongside his grandparents. After getting his start at Bistro Enzo in Billings, his career took him into some pretty remarkable kitchens, including Frasca Food and Wine here in Boulder and L2O in Chicago.

Today, Samuel is Chef/Owner of Corrida, where his cooking brings together the traditions of northern Spain and the agriculture of the American West. Corrida has made regenerative ranching central to what it does, sourcing regeneratively raised beef through Corrida Cattle Co. and pairing it with locally grown produce and ingredients from Spain.

We’re proud to count Corrida as one of our Snails of Approval, recognizing its commitment to a food system that’s good, clean, and fair.

After years spent cooking in Boulder, Samuel has a pretty good idea of what makes for a perfect day here. It starts with coffee at Belaza, includes a stop at @dry_storage (another Snail!) for bread made with freshly milled heirloom grains and a chocolate chip cookie, followed by a hike up Anemone Trail and time with his daughter.

We’re excited to have Samuel at Plant a Seed for Change and even more excited for you to taste what he brings to the farm.

See you August 23.

Join us on Sunday, August 23 for Plant a Seed for Change and enjoy a dish from Chef Samuel McCandless of @corridaboulder. Tickets are available now through the link in our bio.

Perched above Pearl Street with some of the best views in Boulder, Corrida has become known for more than its rooftop patio. Inspired by the steakhouses of northern Spain, the restaurant pairs Spanish tradition with Colorado’s incredible ranches, farms, and seasonal ingredients—creating an experience that’s distinctly Boulder.

Chef Chef Samuel leads the kitchen with a deep appreciation for both Spanish cuisine and Colorado agriculture. His commitment to thoughtful sourcing and regenerative ranching reflects the same values we celebrate at Slow Food.

We’re proud to recognize Corrida as one of our Snails of Approval—a community of restaurants, farms, and food producers committed to building a food system that’s good, clean, and fair. Under Samuel’s leadership, Corrida has also earned recognition for its commitment to regenerative agriculture and sustainable sourcing, including partnerships with regenerative ranches and a menu that celebrates responsibly raised Colorado beef.

At Plant a Seed for Change, you’ll have the chance to meet Chef Samuel, hear the story behind his dish, and experience the thoughtful approach that makes Corrida such a special part of Boulder’s dining community.

We can’t wait to share a meal with you. 💚
