POSTS STORIES REELS

As part of our ‘What’s In My Dabba?’ series, we get a glimpse into friends’ kitchens, as they share judicious spicing of favourite dishes and tips inherited from elders.

This month, we join Rege Batchu (@badandbhajiii), the chef behind beloved recipe hub Bad and Bhaji – home to all manner of glorious Punjabi dishes, lovingly passed down.

Rege tenderly recollects early food memories, his Mama-ji central to each rhythm and ritual: Smoking ghee. Fresh herbs perfuming countertops. Pressure cookers joyfully whistling. Along with revealing tips for saving over-salted dishes and expertly blooming (not burning) spices. He also shares a comforting recipe for warmly spiced Butternut Squash Sabji.

Ep. 24 – Cinnamon Roll | Will It Paratha?! 🫓

This one felt special. Laccha paratha dough, layered with cinnamon, sugar, and butter - finished with cream cheese frosting.

Risky on the tawa, but it came out crispy, buttery, cinnamon-roll perfect.

The Ghee Unit were in full force. Even the Big Man cracked a chuckle.

Would you try it? by @badandbhajiii

Might have taken “thappar khana” a bit too literally 🫓😭

Hand-shaped roti for the big man.

The rules to a good party according to @badandbhajiii : CHA, CHAAT + CHAT.

Consider the chaat SORTED.

Crushed, crispy samosas topped with Queen Chickpeas in a spiced, tomatoey masala, then piled high with sev, pomegranate, tamarind chutney + zingy green chutney.

Crunch, spice, tang + creamy chickpeas in every mouthful. An absolute BELTER of a sharing plate.

The cha + the chat? That bit’s on you.

Rege (aka the Chief Paratha Officer, so you know you’re in safe hands) has VERY KINDLY shared the recipe on our website. Go check it out + give him a follow over at @badandbhajiii 🙌

#AD | Beetroot Paratha with Spiced Potato & Feta Filling. Diwali is near, so I’m trying to get this beetroot & feta paratha onto the dinner table 👀 Picked up the ingredients from @lidlgb and combined slightly sweet beetroot dough with spiced aloo and creamy feta. For us, a big part of Diwali and Bandi Chhor Divas is being together and making sure everyone who comes through the door gets fed, so naturally this one had to get the family sign-off.

Makes 5

Dough:

200g wholewheat flour (atta)
100g raw beetroot, peeled and chopped
150ml water

Filling:
260g potatoes, boiled and mashed
50g feta, crumbled
½ small onion, finely chopped
10g fresh ginger, grated
2 green chillies, finely chopped (or to taste)
1 tbsp fresh coriander, chopped
½ tsp cumin powder
½ tsp garam masala (optional)
½ tsp salt

Cooking: about 1 tsp unsalted butter per paratha

To serve: 0% fat yoghurt

Method

1. Blend the peeled, chopped beetroot with the water, then squeeze and sieve. Add 150-160ml of the liquid to the flour and knead into a soft, smooth dough. Rest for 15 minutes
2. Mix all the filling ingredients together
3. Divide the dough into 5 balls (about 70g each) and roll each out slightly into a 4-inch circle. Brush with a little butter if you like
4. Add a ball of filling to the centre of each and pinch to seal at the top
5. Roll gently into 6-inch discs, careful not to squeeze the filling out
6. Cook on a tawa or frying pan over a low heat, flipping regularly and brushing with the butter, until golden and cooked through
7. Serve with 0% fat yogurt

Kadhi Pakora on Chips | Nostalgic Punjabi

🫓 Kadhi = creamy, tangy yogurt gravy with crispy pakoras
📝 Recipe on my Substack (link in bio)

Mum’s made kadhi every two weeks for as long as I can remember. First night with chawal, second night with chips. Everyone knew the second night popped. This is Nostalgic Punjabi, the dishes I grew up on.

AD | My parents went on a beautiful cruise without me and came back expecting dinner 😂 Savage.

I made them butter paneer masala, was short on time but managed to get everything in one @ocadouk order, buzzing. Their range is massive, which explains how I managed to get every spice I needed in one shop. Also love that they stock brands like All The Aunties.

If anyone speaks to my parents, tell them to take me next time. by @badandbhajiii

Will It Paratha?! Birthday Cake 🎂

It’s the Big Man’s birthday, so naturally I made him a birthday cake paratha. Not that he asked for it.

Full review at the end. I think he’s been watching MasterChef.

If you have a bday message let us know, I’ll pass it on he’ll be buzzing! 🫶 by @badandbhajiii

Garlic & Cheese Naan.

Fluffy naan stuffed with cheddar and brushed in garlic butter. Crispy outside, soft middle, slightly dangerous. Same dough works for bhature too, half the work, twice the carbs. It’s just maths 🧀

⏱ 20 mins cook (+ 2 hrs rest)
🌱 Veggie, no tandoor needed

Full recipe is live on my Substack, link in bio.

Fish Pakora Butty

Every texture I want in one bite. Crispy masala fish pakora, creamy coriander tartare, lettuce and onion doing the crunch, and a slice of melty cheese on brioche.

If I ever opened a little deli I might call it Bad&Bhaji Butties, and this would be first on the board.

Would you order one?
