As Chef Advisor to Slow Food Boulder County, Daniel has been a longtime champion of our mission, helping connect chefs, farmers, and our community through a shared love of good food. For nearly three decades, he’s been an advocate for local agriculture, sustainable sourcing, and food justice—values that continue to guide everything he cooks. Today, he is the culinary heart of River and Woods.

River and Woods is a story all its own. Housed in a nearly century-old cottage on Pearl Street—once home to the beloved John’s Restaurant—the space was given new life in 2016 as a love letter to Boulder. Even its name, borrowed from the poem Over the River and Through the Wood, is a nod to gathering around the table with family and friends. Today, Daniel and the team continue that tradition with seasonal Colorado comfort cuisine inspired by local farms and producers. It’s one of the many reasons we’re proud to recognize River and Woods as one of our Snails of Approval.

We’re incredibly grateful to have Daniel as part of the Slow Food Boulder County family, and we can’t wait to share his cooking with you at Plant a Seed for Change.

This season, Colorado farmers are living through a real crop loss crisis and it’s testing just how strong our local food systems actually are.

Colorado chef Josh Niernberg is one of the voices behind our Feeding Freedom campaign, and fellow Colorado chef Daniel Asher has been amplifying that story too. Their message: when farmers lose a season, local purchasing programs are what help them come back from it.

Our Colorado coalition, 30 chefs strong and growing is organizing around exactly this.

Last Tuesday, Colorado chefs showed their gratitude to legislators for believing in equitable food access for all Coloradans!

@wholesomewave empowers chefs to use their voices for food systems change through the OneKitchen education and mentorship program. In Colorado, @chef_danielasher, @therussfox, @kennyminton advocated for Props LL & MM, which passed in November. Props LL & MM passing means that:

✅ Colorado public schools will continue to serve free school breakfast and lunch for ALL students for years to come. More schools can participate in the state’s Local Food Program, where they receive funding to purchase local foods, as well as technical assistance and training to help kitchen staff use local, fresh ingredients in school meals.
✅ Local farmers and producers will have more opportunities to sell their foods to Colorado schools, a win for the local economy and student health!
✅ Leftover funds can help relieve some of the cuts to SNAP proposed in HR1/the federal budget reconciliation.

To express their gratitude, the chefs delivered food goody bags directly to the legislators that led the Healthy School Meals for All bill, which ultimately became Props LL & MM on the state’s 2025 ballot.

This is a great example of the policy process: the work doesn’t stop after a budget is passed! We’ll continue to show our gratitude as we gear up for Props LL & MM work to begin. Thanks chefs! 👏👏👏 by @chef_danielasher

Shoutout to rockstar Chef & Ag Activist @joshniernberg for his awesome video highlighting farmer-chef relationships and keeping food local! As a chef in Colorado, I know the difference fresh, nutritious, local ingredients make.
Federal programs that help schools, daycares, and food banks buy Colorado-grown food aren't just good for delicious plates; they're good for our economy. Every dollar spent on produce from local farms stays in our community, creates jobs for our neighbors, and puts nutritious meals on tables for our kids.
