HotDog Bouillabaisse is LIVE.
I've always dreamed of my stories in print.
Today, my first column for @kolormagazine is live. How Did I Get Here is the beginning of something I've been building toward for a long time. Directed conversations around food, culture, and our history. Not commentary. Not content. Work that means something.
This column, and what we'll be building on@hotdogbouillabaisse , is about authorship. Who built what, who gets credit, and why those questions still need asking.
None of this happens alone. @thewarneraesthetic for the photography and editorial eye. @eljayaguillo for holding the line on every draft. And to Nigel and Ammar at @kolormagazine for the platform and the belief that this work belongs in print.
I'm proud of this moment. And I'm just getting started.

Sunchoke, fresh and preserved, with pistachio, preserved lemon and black garlic.
Roasted peppers with fermented tomato and a poached egg.
Braised wagyu with emmer and escarole.
Chocolate to finish.

A non-alcoholic pairing is poured at the counter if you want it.

Provisions is running quiche, potato leek with gruyère, and a pot of ribollita.

What’s in the cooler this Saturday.

Reverence Phoenix Provisions is back at Unity Market. The animal and fins list is in the cooler and ready to go home with you, along with the ferments and the pantry work that’s been building all season. The Market Box is live and the new Meal Kit is out. Pre-orders get first pull, so lock yours in before Saturday.

Everything stays cold all day on solar. No grid, no propane, just the @travoca cooler doing its job in the middle of Central Park.

This one didn’t arrive finished. It got rebuilt, stripped down, argued with, and rebuilt again, and every version ripped. The last one finally stopped arguing back.
The placard stays. The rest lives with the people at the table.
