Đặc Biệt: An Extra-Special Episode with @chefnininguyen

Tune in for this extra special episode of Chit Chats featuring acclaimed Vietnamese American chef and author Nini Nguyen, known for her appearances on Top Chef, Last Bite Hotel, and most recently, Tournament of Champions.

Đặc Biệt, Nini’s debut cookbook, is an expansive look at contemporary Vietnamese cuisine. The title, meaning “special” or “with everything,” doubles as a slang term for “being extra” - a mantra that she embraces wholeheartedly, from her chic fashion sense to her bold cooking style.

Nini’s influences span the globe, from Vietnam to her home state of Louisiana, and her book includes family recipes that have evolved from generation to generation. Nini’s collaborative dinner at Sắp Sửa last December gave Denver a taste of Đặc Biệt, and created an opportunity for Nini to bond with Chef Ni over their shared Vietnamese American heritage.

In this episode, Nini speaks candidly about her journey to shape her identity, find her audience, and serve up food that celebrates diversity and uplifts local communities. Her exuberance and confidence make her a creative powerhouse, a fierce competitor, and a dynamic culinary leader. Most of all, Nini’s unapologetic mindset is a masterclass on how success will come to those who trust in themselves.

Episode Five - Thriving not Surviving (Trials and Tribulations of Life and Porchetta)

“Ever since I could stand over a stove, I knew that I wanted to be a chef.”

AJ Paloni’s pathway to running a business has not always been easy, but with his acclaimed restaurant The Porchetta House ( @porchettahouse ) he is finally hitting his stride.

When he was a culinary school graduate in his twenties, AJ found himself struggling to make ends meet, which led to some big mistakes and eventually incarceration.

“Mistakes don’t define you.”

Determined to rise above the missteps, AJ relocated to Denver, and established The Porchetta House, a casual eatery at 1510 N Humboldt Street in Denver. PH pays homage to Italian street food with flavors inspired by AJ’s own cultural heritage.

The menu is an ode to his upbringing, but his business sense is a testament to his character. His meticulous process keeps his creative vision intact, from quality ingredients, formally trained techniques, and expertly calibrated flavor profiles. He has a passion for service and forges genuine connections with the locals who appreciate his craft.

AJ knows The Porchetta House is merely one facet of his full culinary potential, but for now he’s overjoyed with how it’s provided him a fresh start and meaningful connections to the Denver food scene.
