We’re starting the year with something we’re genuinely proud to announce: Coffee Flock is now a @birdfriendlycoffee ®️ 𝗹𝗶𝗰𝗲𝗻𝘀𝗲𝗱 𝗰𝗼𝗳𝗳𝗲𝗲 𝗿𝗼𝗮𝘀𝘁𝗲𝗿!

𝗪𝗵𝗮𝘁 𝗜𝘀 𝗕𝗶𝗿𝗱 𝗙𝗿𝗶𝗲𝗻𝗱𝗹𝘆®️?

Bird Friendly®️ is a certification developed by the 𝗦𝗺𝗶𝘁𝗵𝘀𝗼𝗻𝗶𝗮𝗻 𝗠𝗶𝗴𝗿𝗮𝘁𝗼𝗿𝘆 𝗕𝗶𝗿𝗱 𝗖𝗲𝗻𝘁𝗲𝗿. Coffees carrying this seal must come from certified organic farms and be 100% shade-grown, protecting habitats that support birds, biodiversity, and healthy ecosystems. It’s one of the most demanding environmental standards in coffee.

Shade-grown, organic coffee helps preserve forests, protect migratory birds, and maintain biodiversity while improving soil health and farm resilience. These systems support not just coffee plants, but entire ecosystems — making coffee farming more sustainable for the long term.

In abril 2019 Dylan and I moved from Buenos Aires to Miami, starting our adventure with @coffeacompany. We worked super hard doing everything we could by ourselves, except plumbing and electricity. After months than seemed endless we finally opened our doors in November 2019. And in February 2020 we had to close them because of the pandemic. These were hard times. Uncertainty and fear were our partners for many months until August 2020 when we started teaching again on the online format. Little by little we started recovering spaces and work and believe it or not, in November 2022 we were able to move next-door to a bigger space. This space was previously occupied by a designer, so all our walls were covered with signs and stickers related to the business. For two years many visitors were confused when they entered Coffea. Of course they were.

Finally, in November 2024 we started remodeling the space and we couldn’t be happier.

This is our new home, and yours as well.

Thank you to those friends that came to be with us, we really appreciate it from the bottom of our hearts. Dylan, Mada and I are grateful for your time!

Happy International Coffee Day!

Today, we celebrate much more than the beverage in our cups. We celebrate the producers who cultivate it, the people who harvest and process it, and the exporters who prepare it to travel beyond its origin.

We also recognize the importers and green coffee buyers who commit to coffees long before they reach the roastery, investing capital and assuming the uncertainty of quality, logistics, changing markets, and future demand. Their decisions help connect the work at origin with the roasters and businesses that will ultimately give each coffee a home.

We celebrate the roasters who work to reveal the coffee’s potential, the baristas who prepare it, and everyone who makes coffee part of their daily life.

Coffee connects countries, cultures, communities, and people. Every cup carries a story shaped by nature, knowledge, dedication, risk, and countless decisions made long before the coffee reaches us.

At Coffee Flock®, we believe that every coffee has a home, and we are grateful to be part of the journey that helps it find its way there.

Como dicen en mi país…saliendo el payaso y soltando la risa! 🤡🤣

After 15 hours in 3 airports and 2 planes we finally arrived to Hamburg, Germany! We left our coffee paraphernalia on the luggage so…BIG MISTAKE!

Anyways, we got here and before any other thing Coffee First! Bypass because we needed it a bigger batch!

Happy Labor Day from our flock to yours

Today is about honoring hard work, and we could not let it pass without honoring the heart of Coffee Flock®.

Our company is who we are because of who we are to each other.

I am so grateful for @thome.dylan , for his creative vision, his energy and for bringing fresh ideas that keep us dreaming bigger.

I am so grateful for Maria Daniela, for her dedication, her warmth and for the love and care she pours into every detail and every person she touches.

And I am grateful for the journey I get to walk alongside them, bringing my passion for coffee and community together to build this nest we all call home.

Together, the three of us make Coffee Flock® what it is. A small team with a big heart.

Is specialty coffee really global, or have we simply created a global language around very different experiences?

My trip through Germany made me think about how much culture, hospitality, roasting philosophy, extraction, personal preference, and professional experience shape the way we judge a cup.

We may share protocols, vocabulary, and techniques, but we do not share identical palates or identical expectations.

And maybe that is exactly the point.

Specialty coffee does not need to feel the same everywhere to be global. Berlin can feel like Berlin. Miami can feel like Miami. What matters is that we keep learning from each other without turning difference into uniformity.

Los invito a que lean mi nuevo Blog publicado en Coffee Flock. Me tomo cierto tiempo escribirlo por la cantidad de material relacionado pero estoy muy feliz con el resultado. El artículo explora cómo la genética, el ambiente, la nutrición, el desarrollo de la fruta del café, y las decisiones de cosecha dan forma a la química y potencial sensorial de la semilla del café y como en última instancia esto influencia lo que probamos en la taza. Espero les guste.
