This is what a morning under the arches at our bakery, @foldfocacceria, looks like…

We built Fold because to me, a deli is all about making things fresh in-house. We wanted to make our bread for our sandwiches, develop our own style of sweet treats and really lock in on quality.

But this place has started taking on a whole life of its own in recent weeks.

Record sales 3 Saturdays in a row, queues round the block, loads of new faces, lots of regulars and a shed load of baking to make it happen.

That’s why we’re giving Fridays a go.

So this week, come see us down at 62 Brussels St. between 10am-2pm on Friday or 10am-2pm on Saturday (or sell out).

And we’ll FINALLY have coffee 🍞 by @foldfocacceria

I’m lost for words.

Record day after an hour and 15.

Queue round the block that didn’t let up.

Yesterday was the day it clicked.

To everyone that showed up, queued, ate, brought a friend, waited in line and to those that keep asking “WHY ARE YOU ONLY OPEN ON SATURDAY’S?!”

Thank you. You were part of something really special. And you know what, you’re right. Why are we only open one day a week.

Pin it, 18/09/26. Fold does Fridays.

You’ve made it happen 🍞 by @foldfocacceria

Our Jo and Anna are competing in a @hyroxworld today for a cause that’s very close to both their hearts.

They’ve been training incredibly hard in an effort to raise money for charities that support Women’s empowerment around the world.

Good luck girls, we’re all behind you x

I’ll drop a link on our story for anyone that would like to support them by making a donation to the fundraiser… by @foldfocacceria

guys when I say this is a MUST visit, I mean it!
@foldfocacceria is tucked away under the arches on Brussels Street in town & is the most gorrrgeous bakery! They bake all the goods for @thecheesylivingco … so you already know it’s going to be good!
but hand on heart when I say that sticky toffee pudding focaccia was the best thing I think I’ve ever eaten😍
what we ordered:
- sea salt & rosemary focaccia 🍞
- cheese twist🧀 (giant may I add slide 9 for evidence🤣)
- the everything bagel 🥯
- dame bar cookie 🍪
- sticky toffee pudding focaccia 🍮
10/10 no notes for everything👏🏻this is now a weekly Saturday morning trip for sure!
if you needed a sign to head down this morning, consider it is! Open 10am-1pm every Friday and Saturday 🤩

Friday & Saturday mornings are when the week really gets into a groove for us down here at 62 Brussels St.

I still always have that nervous “what if nobody comes?” moment around 9am, but then 10am comes around and there you are, showing up for us again.

As we get deeper into winter and the weather inevitably continues to turn, we’re bound to see less of you in the queue…

So this is a thank you to each and every one of you that keeps prioritising their weekly trip to the bakery over being warm and dry.

*I’m working on something to help with that*

Bakes and bread also available Tuesday-Sunday at all 3 of our @thecheesylivingco locations 🍞 by @foldfocacceria

I came back to visit Fold Focacceria again as those sandwiches looked so good! We ordered:

- Salt Beef Reuben
- The Chopped Chilli Tuna

Both were so good and the focaccia was so fluffy. I think the tuna was my favourite, I just loved the chilli crisp 🌶️

They were absolutely amazing with their allergen information as well!

We got lucky that it wasn’t too busy as it was a bit more of a rainy day, but this spot is amazing to visit no matter the weather 🌟

They have limited openings hours, 10-1 Fri and Sat but are worth getting there early! by @foldfocacceria

It’s a bloody lovely day to head down to 62 Brussels Street and bag yourself a sticky toffee focaccia…

Custard, ice cream or be an adult and have both.

Thats a good use of free will right there. by @foldfocacceria

I was so happy to be visiting @foldfocacceria for the very first time time…

From the genius’s behind The Cheesy Living Co., I knew I was in for a proper treat.

Honestly you can never have too many Perello olives. Ever. 🫒

My mouth was WATERING just looking at all the delicious treats.

Starting strong - their Foccacia sandwiches which were GLOWING in the sunshine. You could choose between chopped chilli tuna, classic salt beef or the Kim-cheese. Clever.

Absolutely delishhhh caramelised onion sausage rolls (sat dipping it in ketchup as we speak) and their cheese twist was just how I liked it - SUPER CHEESY.

You can’t leave without a cookie. It should be the law. I left with two. Felt very proud of myself (these were a cinnamon crunch cookie or a NYC toasted pecan cookie).

BIG autumn vibes here with a scrumptious apple pie Foccacia, I’m sorry I didn’t even know this was possible?? And a classic cornflake brownie, always a crowd pleaser.👏

Their absolute classic - the sea salt and rosemary Foccacia. This was probably the size of my head, but I’m not mad at it.

Overall, a bloody lovely start to my Friday morning. Fold Foccacia, will probs see you tomorrow and Sunday. by @foldfocacceria

Apple crumble & custard focaccia on all weekend down at the arches…

I’m not sure there’s ever really been a better time to be alive. by @foldfocacceria

For our next collaboration, we’ve teamed up with fellow New York-inspired railway arch-dwellers @foldfocacceria 💚

We’ve topped our 18” base in bechemel with a touch of Dijon, blanket coverage of sliced provolone as well as fior di latte, tangles of FOLD’s house Salt Beef, and a garlic butter Everything Seasoning crust. After baking it’s finished off with a thousand island swirl, dill pickle, and a pot of sauerkraut on the side.

We’ve also got Brown Butter Chocolate Chip cookies, baked fresh each day by FOLD, Friday to Sunday. Warm them through when you get home, top them with a scoop of Brickells and you’re in for a treat.

Pre-order next week from 12pm Tuesday 13th, available until Sunday 18th. See you soon! by @foldfocacceria

Postcards from the counter last weekend…

Menu drop for this week is landing on our story later today.

We’ve got a new sandwiches, TWO new sweet focaccias, TWO new cookies AND some staples that we just can’t bare to say goodbye to yet.

We’ve also got a new oven on the way and some new faces hopefully joining the team soon, all to help us keep feeding you and the counter fuller for longer.

News on our first ever Fold colab will be hitting your feed HARD this Sunday.

It’s all going on down here at 62 Brussels St. - make sure you stick around for the ride 🍞 by @foldfocacceria

This weeks menus are here and we’ll have even more of everything than ever, including our newly developed NYC Brown Butter Chocolate Chip cookies…

I appreciate the weather’s slowly turning, that’s why I’m even more grateful to everyone that’s showing up on a weekend and waiting outside in the cold.

We’re doing everything we can to make sure that wait is worth it.

Open Fri & Sat, 10am-1pm, menus are this way 👉🏼 by @foldfocacceria
