“Luna Piena” Matured Hanwoo tenderloin grilled over binchotan then glazed with 30 year old modena balsamic juice / Pine & Eun-haeng(은행) nut puree. “Chuseok” has traditionally been the biggest holiday for the Korean people. Celebrated on the 15th day of the 8th month of the lunar calendar when the moon is at its brightest and fullest of the year. As a celebration of the good harvest, Koreans visit their ancestral hometowns and share a feast of Korean traditional food. Pine nuts and Eun-haeng(은행) nuts are ingredients that can’t be missed. . . . . @gucciosteria @francescanafamily #forbes #michelinguide #50bestrestaurants #gaultetmillau #gucciosteria #gucciosteriaseoul #gucciosteriadamassimobottura #foodphotography #finedinninglovers #seoul #korea #구찌 #구찌오스테리아 #구찌오스테리아서울 #gucci #michelinkorea #lechefmagazine #world50best #추석 #명절 #한가위 #잣 #은행 #한우 #보름달 by @hyungkyu_jun
Dry and salted cod has been the stable ingredient throughout regions and country such as northern Europe, Mediterranean, West Africa, Caribbean and brazil. These regions and country has been utilizing for many years due to ingredient preservation method. In Korea, there is similar preserved cod call “Hwangtae” (황태). “Hwangtae” (황태) is made by drying the fish during winter and allowing it to undergo natural freeze-thaw cycles giving its unique flavor and aroma. In @gucciosteria Seoul, we have created a pasta dish using Chitarra spaghetti and Hwangtae, recreating the Italian classic dish Stoccafisso all'Anconetana. . . . . . @gucciosteria @francescanafamily #forbes #michelinguide #50bestrestaurants #gaultetmillau #massimobottura #gucciosteria #gucciosteriaseoul #gucciosteriadamassimobottura #foodphotography #finedinninglovers #seoul #korea #구찌 #구찌오스테리아 #구찌오스테리아서울 #gucci #michelinkorea #lechefmagazine #world50best #bacalao #baccala #saltedcod #황태 by @hyungkyu_jun
“Capitone della Vigilia” Eel becomes the star of this dish essential in the region of Campania. We glaze the eel with Saba and serve it alongside Olgari (Korean winter cabbage), pine nuts, raisin and anchovies. This is our reinterpretation of another Campania classic, Pizza di Scarola, trading the winter Italian endive (scarola) with the Korean seasonal equivalent. . . . . . @gucciosteria @francescanafamily #forbes #finedininglovers #michelinguide #50bestrestaurants #gaultetmillau #massimobottura #gucciosteria #gucciosteriaseoul #gucciosteriadamassimobottura #foodphotography #seoul #korea #구찌 #구찌오스테리아 #구찌오스테리아서울 #gucci #michelinkorea #미슐렝가이드 #서울미식 #lechefmagazine #world50best #eel by @hyungkyu_jun
“Galbi, Untitled, 1953” Inspired by Mark Rothko’s famous painting ‘Untitled, 1953’, this dish uses Korean ‘Galbi. The beef rib is slow-cooked for 24hrs and glazed in its own juice and balsamic vinegar from Modena, served with beet and mushroom purees and garnished with ginko, morel mushroom, with a fermented fall soybean leaf on the side. . . . . . @gucciosteria @markrothkoart @francescanafamily #forbes #finedinig #michelinguide #50bestrestaurants #gaultetmillau #massimobottura #gucciosteria #gucciosteriaseoul #gucciosteriadamassimobottura #foodphotography #seoul #korea #구찌 #구찌오스테리아 #구찌오스테리아서울 #gucci #michelinkorea #lechefmagazine #world50best by @hyungkyu_jun

“Sentiero di Mt.Halla” This dish was created in memory of a trip to Jeju Island. Korea peninsula looks small compared to other countries in terms of area, but the characteristics of each region are well preserved. In particular, the first thing that comes to people's minds when they think of Jeju Island is Mt. Halla, Jeju Black Pig, and canola flower fields. As a dish with the meaning of Hallasan’s trail ‘Dulle-gil’, it is a dish that expresses Jeju’s by adding Korean ‘Chamnamul’ (forest herb) pesto, Canola flowers, garlic shoots, Puntarella and sirloin of Jeju's native black pork grilled over binchotan charcoal. . . . . . @gucciosteria @francescanafamily #forbes #finedinig #michelinguide #50bestrestaurants #gaultetmillau #massimobottura #gucciosteria #gucciosteriaseoul #gucciosteriadamassimobottura #foodphotography #seoul #korea #구찌 #구찌오스테리아 #구찌오스테리아서울 #gucci #michelinkorea #lechefmagazine #world50best by @hyungkyu_jun
“Regina di Mare” Tribute to Gucci fashion show held at grand palace “Gyeongbokgung” Seoul, Korea Our ancestors not only sourced the best ingredients for the kings/Queens but also used the five colors “Obangsaek” in harmony when preparing food to ward off bad energy and bring health and blessings. At Gucci Osteria Seoul, we used salsa verde, guazzetto sauce, saffron vongole, snowflake mushrooms, and wood ear mushrooms to express the royal dish ‘Domi jjim’ (steamed sea bream) with five colors of Italian flavors
“Apple Strudel Foie-gras” Our 1st welcoming dish this fall season Inspired by classical pastry 'strudel di mele'. Matching the taste of ‘strudel di mele’ with foie gras. Crispy chips made out of Korean seasonal apple spiced with cinnamon, thin layered of foie-gras terrine and raisin jam. Peels of the apples that have been used to make the chips are then dried and utilized on plating creating autumn leaf like appearance.
