We are proud to welcome Chef Alex Napolitano as Culinary Director of il Buco Family and Executive Chef of il Buco.

Formative years in MICHELIN-starred kitchens in Italy. A decade in New York, cooking with Hillary Sterling and Missy Robbins at A Voce, at The Elm with Paul Liebrandt, Charlie Bird and Rubirosa. Eight years leading kitchens across the Hudson Valley at Scribner’s Lodge, Inness and The Maker Hotel. A career built on letting great ingredients speak for themselves.

Based on Bond Street, Alex will collaborate across all il Buco locations and help guide our next chapter, including our expanding bakery and commissary program, market pantry lines and new ventures on the horizon.

His influence is already being felt, il Buco’s summer menu is alive with it. We hope you’ll come to the table soon!

In 1994, Donna Lennard and her then-partner started out in the restaurant serving splashes of wine out of their Bond Street antique shop.

Manhattan is particularly rough on restaurants, but despite the odds, @ilbuconyc not only survived but thrived, branching off into a grocery story and outposts in the Hamptons and Ibiza. After spending years finding the right ingredients, Lennard opened up to CULTURED about her journey from there to here and what’s next for the storied Italian restaurant.

One of the perks of being Montauk’s neighbor is access to fresh local seafood. This yellowfin tuna was caught off Block Island just 12 hours before it reached our kitchen. It doesn’t get much fresher than that. by @ilbucoalmare

A heartfelt thank you to @wallpapermag for including me for another year as an Innovator on this year’s #wallpaperusa400. I’m honored to be among such visionary designers, leaders and collaborators and so many dear friends whose work I admire and am constantly inspired by.

None of this happens without the collective that makes il Buco what it is: our incredible teams, our chefs, our artisans and makers, and our community of patrons, all of whom play such a foundational role in this big beautiful family. From day one, we’ve aimed to build something more than just a restaurant, but a feeling of home. Thank you for your continued support, whether that’s a seat at our table, a piece of @ilBucoVita in your home, or trusting us with life’s special moments. This recognition reminds us why we do what we do every day. Over 30 years in, and it feels like we’re just getting started.

Grazie Mille!

Thirty years ago, when il Buco morphed from antique store to restaurant, Alberto and Donna began their search for the best olive oil. This led us back to Alberto’s roots in Umbria, where the Pandolfi-Elmi family had been tending the same groves since the 1600s.

Hand-harvested in October, when the olives are still green creating an oil with a low acidity, high in polyphenols (antioxidants). No pesticides. No shortcuts. In 2000 we helped the Pandolfis build a mill on their estate, so the fruit could go directly from tree to press.

Eventually our search for the finest ingredients led us to Sicily and the salt pans of Trapani where we met Alberto Galluffo, an expert in single-varietal oils.

Each oil displays the distinct character indigenous to its region. These are the oils you’ve been tasting at il Buco for years. New to our pantry are flavored finishing oils, made the traditional Sicilian way by pressing fresh citrus, fennel, or peperoncino alongside the olives, allowing the flavors to become part of the oil itself.

Whether you’re new to our olive oils or a longtime fan, stop in at any of our restaurants for an olive oil tasting - find your varietal, learn its story, and take a bottle home. Available at the restaurants and online.
