The last few months have been a lesson in slowing down, adapting, and learning how to move through uncertainty.

I’ve been dealing with hemorrhages in both of my eyes that have seriously affected my sight and daily life. What started suddenly in my left eye eventually happened in my right as well. Blurred vision, inconsistent focal points, warped spatial awareness to name a few of the daily struggles. Right now I’m in the middle of treatment and recovery.

To be honest, it’s been hard.

Hard physically, because even simple things like reading tickets, texting people back, walking through crowded spaces, or spending long days in the kitchen suddenly feel different.

Hard mentally, because so much of my identity is tied to being active, creative, dependable, and constantly pushing toward something bigger.

And maybe the scariest part is that all of this is happening during a period where I’ve been trying to grow, not just professionally, but personally too.

There are definitely moments where I feel scared, frustrated, sad, and honestly overwhelmed. I’m still learning how to accept help, slow down when I need to, and trust that progress doesn’t disappear just because the timeline changes.

But I’m trying to hold onto hope. Hope in treatment. Hope in time. Hope that this version of life is temporary, even if it feels heavy right now.

I’m still here. Still cooking. Still dreaming. Still fighting for the future I want, just learning how to do it through a very different lens right now. by @mark_garcia13

Kim, Kevin. Thank you for giving me this opportunity and welcoming me with open arms. I knew this job would be fun when I started, but not THIS much fun. Thank you for trusting me, for believing in me and for empowering me to lead and foster a culture of positivity, kindness and fun. You both inspire me to be a better chef, leader and human being. I’m so damn proud of what we’ve built, and so damn proud of you. (I’m a sentimental guy, what can I say?)

And I’ll give myself a little credit too. This is the dream. One day I’ll be in the drivers seat, and it’s experiences like this that are shaping how I’ll share my love for hospitality.

Life brought us together in the west village. Coming up in this industry I noticed a pattern with chefs. They would have key people would who spend years with them and the trust and confidence for these individuals was unparalleled. When I met Kathy, I felt the same way.

Kathy has been working with me for a little over 2 years now. She brings a level of professionalism , joy and care with her that is unrivaled. The love she carries for her craft, her team and herself is nothing short of inspiring.
