🥕 No eggs, no oil, no butter, just a block of silken tofu blended into a boxed carrot cake mix. @run2food folds in shredded carrot, bakes it, and tops it with a frosting made from more silken tofu, maple syrup, and vanilla. Tag a friend who loves a sweet treat!

#MeatlessMonday #TofuRecipes #CarrotCake #PlantBasedBaking

INGREDIENTS
Cake:
✅ 1 block (250g) silken tofu
✅ 1 box carrot cake mix (around 400–500g)
✅ 1 cup shredded carrot (about 100g)

Optional Tofu Frosting:
✅ 300g silken tofu
✅ 2–3 tablespoons maple syrup (or sweetener of choice)
✅ 1 teaspoon vanilla extract
✅ 2–3 tablespoons vanilla protein powder or icing sugar (adjust to taste)
✅ Pinch of salt

METHOD
Preheat your oven according to the cake mix instructions and line or grease a loaf tin or square cake tin.
Blend the silken tofu until completely smooth.
Add the blended tofu to the carrot cake mix along with the shredded carrot. Mix until just combined.
Pour the batter into your prepared tin and smooth the top.
Bake according to the packet instructions (around 30–40 mins) or until a skewer inserted into the centre comes out clean.
Allow the cake to cool completely.

To make the frosting:
Blend together the silken tofu, maple syrup, vanilla, protein powder (or icing sugar) and salt until completely smooth.
Chill for 20–30 minutes if you’d like it a little firmer.
Spread over the cooled carrot cake and enjoy!

🍠 Mashed sweet potato is the surprise ingredient in @ohyeanish's granola, stirred into oats, nuts, and coconut flakes with maple syrup, cinnamon, nutmeg, and ginger. For crunchier granola, use less sweet potato. Tag someone who loves granola!

#MeatlessMonday #Granola #SweetPotato #Breakfast

🍠 Ingredients:
* 1 cup mashed sweet potato (cooked and cooled)
* 3 cups old-fashioned rolled oats
* 1 cup chopped nuts (pecans or walnuts work great)
* ½ cup unsweetened coconut flakes (optional but adds texture)
* 2 tbsp chia seeds or flaxseeds (optional for crunch and nutrition)
* ¼ cup melted coconut oil or olive oil
* ⅓ cup pure maple syrup or honey
* 1 tbsp vanilla extract
* 1 ½ tsp ground cinnamon
* ½ tsp nutmeg
* ¼ tsp ginger
* Pinch of salt
(Optional Add-ins after baking)
* ½ cup dried cranberries, raisins, or chopped dates
* ¼ cup mini chocolate chips or white chocolate chips (after it cools)

👩🏽‍🍳 Directions:
1. Preheat oven to 325°F (160°C). Line a large baking sheet with parchment paper.
2. In a large bowl, whisk together the sweet potato mash, coconut oil, maple syrup, vanilla, and spices until smooth.
3. Add the oats, nuts, coconut flakes, and seeds to the bowl. Stir until everything is evenly coated.
4. Spread the granola mixture evenly onto the baking sheet. Press it down slightly with a spatula (this helps create clusters).
5. Bake for 35–45 minutes, stirring halfway through, until golden brown and crisp.
6. Let it cool completely (it will get crunchier as it cools).
7. Mix in any optional add-ins once cooled.

🧡 Storage:
Store in an airtight container or jar at room temperature for up to 2 weeks, or in the freezer for up to 2 months.

💡 Tips:
* For a crunchier texture, use less mashed sweet potato (¾ cup instead of 1 cup).
* Add a sprinkle of brown sugar before baking for a caramelized flavor.
* Try pairing it with vanilla almond milk or Greek yogurt and fruit for a filling breakfast.
