Hojicha Madeleines. Now that the weather has dipped slightly, it’s time to turn the oven back on! These madeleines are light with crispy edges and a hint of hojicha. Mom has returned to Hong Kong after 2 1/2 months in LA. It was probably the first time my sister, my mom, and I have spent this much time together as adults. I really enjoyed our chats about the most random things. And when we compared old memories, we each remembered different parts of the same stories. How funny that was! Have you ever gotten a giant box of palmiers from Costco? We got one & had zero chance of finishing it. So I turned them into dessert. This Almost Napoleon is inspired by a classic Napoleon dessert, but looks nothing like the real one. On our 6-day Oahu trip, we were on a mission to find the BEST shave ice! 🍧 We tried 4 spots, and yes, we picked a favorite! 1. Ululani’s Hawaiian Shave Ice (@ululanishawaiianshaveice) - We might be a little biased since we first tried it in Maui, but it still wins. Light, fluffy ice and natural-tasting syrups. Must add macadamia ice cream. It’s creamy with little bites of macadamia nuts. Our # 1! 2. Chillest Shave Ice (@chillestshaveice) - The most unique flavors like mandarin orange, hojicha, and kinako latte, all made in-house. The ice was super fine and fluffy, and the portion is huge, so it’s perfect for sharing. A very close second! 3. Waiola Shave Ice (@waiolashaveice) - A local classic since the 40s. Soft, light ice with house-made syrups. The ice cream was just okay, but overall still delicious. Honestly, the top 3 were all really solid! 4. Matsumoto Shave Ice (@matsumotoshaveice) - A North Shore staple since the 50s. The line was long but moved fast. The ice was more coarse and not as fluffy, and the syrups tasted a bit artificial. Anyone else remember Curry House in LA? I’m still sad it closed during the COVID era. It used to be one of my favorite comfort food spots. This Ground Chicken and Tofu Curry is my take on their version. I used to order it all the time. It’s comforting without feeling too heavy, w/ savory ground chicken, silky tofu, & rich Japanese curry. My favorite part is the garlic spinach rice. It adds so much flavor & really brings the whole dish together.
