Holliday party time! We hosted Assem’s students and colleagues for an end-of-the semester break. Fun group!

If you need a holiday dinner menu for a crowd, with lots and of veggies and mostly make-ahead dishes (this was on Friday night), check this out:

-Copycat Mendocino Farms Pearl Couscous (really flavorful and vegan and good cold) with Carrots and Cauliflower by @missinglokness
-Chicken Country Captain (this is intense to make but not hard and the flavors are mesmerizing) with rice by @alexhitz
-Buttermilk cornbread from @allrecipes
-Salad was romaine, radicchio, fennel, and roasted beets (big hit and sat well without getting soggy), rice wine vinaigrette
-Since it was a big group, and we had a bunch of kids in the group, we did veggie and fruit trays, which I find are usually are a waste if you serve an actual meal, and a cheese plate (3 cheeses and rice crackers) that was barely touched. The verdict? the fruit was popular, but many of the veggies were leftover
-The warm drink is spiced cider and orange juice, a really great drink for a crowd on a chilly night:
Wassail by @aspicyperspective
-For a crowd of a couple dozen I like to do 2 or 3 desserts, and so we went with my old stand bys Lemon Yogurt cake, Chocolate cake from Orangette blog, and a new recipe from @leitesculinaria for a gingerbread Bundt with a lemon glaze The crowd liked them in that order; lots of ‘lemon people’ in the group!

And a reminder: to everyone who is thinking you need to decorate every surface before you can have guests over in December, I say, why? Ain’t nobody going to care. Host that gathering and enjoy the season!

I absolutely love Mendocino Farm’s Curried Couscous, and the best copycat recipe I’ve found and used over and over again is from @missinglokness . I just have a different method of cooking the carrots - I throw them in the pot of couscous that is almost done cooking, instead of roasting them. These have been a crowd favorite!
