Whilst Christmas (and everything about it, especially the food) is elite… I don’t want to see a brussel or a parsnip for at least a week 😂.

Your girl needed some spice in her life 🌶️
(…although unfortunately not too much spice, because it also had to pass the taste test of a very beige-paletted 4yr old 😂)!

So instead of a Sunday roast, we went for a Chicken Makhani…as this one never lets us down. Comforting, cosy, and just spicy enough to feel exciting without causing too much chaos at the dinner table.

I’m pretty sure I posted this way back when I first started this page, but it’s so good it deserved a second appearance. We always go with @jamesmartinchef recipe, mainly because there is absolutely no judgement from that man about the quantity of double cream and butter involved. That energy is welcome in my house at all times, quite frankly.

I also hadn’t made naans in a hot minute, but they survived🙏 Always garlic & coriander for me, although I would love to attempt a peshwari naan from scratch at some point… which would almost certainly earn me a few extra wife points.

So… how is everyone coping in these final few December days?
Are we still cooking proper meals, living off leftovers, or surviving on chocolate, crisps and Christmas reruns? No judgement here…I’m very much in my “eat what brings peace” era ✨ by @norfolksupperstories

Another dish inspired by @eatwellwithlauren tonight for our boujee but on a budget mini series… because let’s be real, December is absolutely rinsing my bank account 😅

This Chicken and Halloumi Fajita Bowl an absolute win and I deffo recommend you run (do not walk) to her insta and try it 😍.

We used bits we already had in the cupboards and grabbed the rest from @aldi, and it worked out at about £2.85 a head…which is honestly wild considering how good it tasted. Proper comfort food that still feels a tiny bit fancy.

And it was exactly what we needed after the cutest Monday ever watching our little one in his first school nativity. My heart is still melting. 🥹💛

Perfect cosy, easy family dinner….no effort, no stress!

Thai Chicken Crunch Burgers

I had to pause my late night doom scroll when the @mush.kitchen video that inspired these little beauties appeared on my feed, as I knew it was something that we were definitely going to have to try and recreate!!!

This was our take on his Thai Crunch burger, and honestly it was as unreal as it looks!!! 🌶️🔥

Crispy Thai seasoned chicken breast, crunchy slaw, a spicy Thai chilli sauce, crispy garlic, fresh chilli, Thai basil and a thick layer of sriracha mayo all stuffed into soft sesame buns 🤝

Could you eat them politely…absolutely not, but they were messy in the best way possible. The kind of dinner where you need extra napkins and a moment of silence after the first bite.

Not sure what hit harder… the crispy chicken or the sauce dripping absolutely everywhere 🌶️ by @norfolksupperstories

No big speech. Just slow cooked birria beef burritos 😍🌯🔥

Loaded with rich shredded beef, melted cheese, fresh salad and plenty of smoky dipping sauce 🌶️

I used the Taco seasoning from @jdseasonings for the beef and it honestly made the flavour so good without needing loads of extra spices ✨

Recipe below ⬇️

• 1kg beef brisket
• 1 sachet @jdseasonings Taco seasoning
• 1 onion
• 4 garlic cloves
• 2 tbsp tomato purée
• 1 tbsp chipotle paste
• 1 tsp smoked paprika
• 500ml beef stock
• 1 tin chopped tomatoes
• Juice of 1 lime
• Soft tortilla wraps
• Cheese of choice
• Lettuce + red onion

Brown the beef, soften the onions and garlic, then stir through the tomato purée, chipotle paste, smoked paprika and Taco seasoning. Add the tomatoes, stock and lime juice, then slow cook until the beef falls apart. Shred the beef, load into wraps with cheese and salad, then serve with the rich cooking juices for dipping 🌯🔥

Snack requests are basically a full time job over here during the Easter holidays 😅 like… why are they hungry every 5 minutes??

These @junglesquadunite cake bars were kindly gifted to me and honestly… the timing couldn’t have been better for my snack obsessed 4 year old 🙃

They’re such an easy win — the cakes are all shaped like different characters (which obviously makes them 10x more exciting), and my little one and his cousins were fully obsessed from the first bite!

AND they come with trading cards… which kept them entertained in the garden for way longer than I expected (a rare peaceful moment 🤝)

Plus they’ve got 60% less sugar, which makes me feel a tiny bit better about how many snacks are being requested on a daily basis 😅 and I won’t feel guilty popping them into his school packed lunch either

Safe to say… fully approved by my little one 🙌🏻

We love a curry in this house, and it felt like far too long since we last had one, so this was well needed 🍛✨

Made a Chicken Balti using @jdseasonings and I can’t lie, this blend is such a good one. Proper Balti flavour with just the right amount of heat 🔥 and no messing about with loads of spices.

I also made my own naans… garlic and coriander which were a win… but we won’t speak about the peshwari ones though😭 an absolute disaster. Straight in the bin 😂. But I refuse to be defeated, I’ll try again soon.

The spice blends and seasoning kits from @jdseasonings have been an absolute game changer for our mealtimes. They have SO much choice, so it never feels repetitive…just easy, really good dinners every time!

Brunch at @goatshed_norfolk with my mumma & my little sidekick 🥐✨

We tried their spring menu and it did not disappoint. I went for the special: a filled croissant with fried eggs, pastrami, confit tomatoes, chilli jam, mozzarella and garlic & herb oil… so good. Mum had smashed avo on sourdough with halloumi & bacon, plus tomatoes & chilli jam, and the little one went for pancakes with syrup & fruit… from the kids menu but honestly huge 😂

It’s not just the food either. There’s a gorgeous farm shop packed with local produce…could have been there hours having a good nosey!! As it’s a working farm you can wander over and see the newborn goats and calves 🐐🤍 you can even book in for calf cuddles which was very tempting!!

They also run things like goat yoga and sausage making which I’m definitely intrigued by…

Such a nice girly morning with my mum, even with the feral one keeping us on our toes the whole time 😂💛

Highly recommend if you’re local 💛 by @norfolksupperstories

Sometimes you just need a little spice in your life… and I don’t mean emotionally (well… maybe that too 😂) 🌶️

We LOVE a classic chilli con carne in this house, but we wanted to level up to a date night quality version. So we swapped the usual mince for slow-cooked beef cheek (inspired by @fat.sam.eats) and just WOW 😍🔥It’s richer, softer, just… so much better!!!

We added a bit of dark chocolate which sounds rogue but trust me… it doesn’t make it sweet, it just deepens everything. Makes the sauce feel thicker, richer, a bit more luxurious.

This dish was giving “we made an effort but still eating it in comfy clothes on the sofa” energy 😂

Date night chilli vs our everyday chilli. Sorry to the original 😂 by @norfolksupperstories

Another spring Sunday, another gravy dinner 🤎

I know it’s “just” sausages and mash… but this gravy has completely changed the game for me.

We tried it after seeing @notorious_foodie make something similar and it’s liquid gold. Genuinely don’t think I can go back to a normal gravy now… it’s ruined me a bit 😂😂

It’s packed with red & white onions, bacon lardons, balsamic, sherry vinegar, a good glug of red wine, garlic, butter, rosemary & thyme, all cooked down until it’s rich and glossy and honestly just unreal.

The chipolates are our 2nd faves from @priorsofwestlynn…sadly they were sold out of their cracked black pepper sausages, but these ones worked just as well 😍.

Such a simple dinner, but one I’ll always come back to. by @norfolksupperstories

A spring Sunday well spent 🌿✨

We headed out for a family roast at @theroseandcrownharpley with our little sidekick, and honestly… sometimes it’s just nice to not be the one cooking or washing up 🫶

My husband started with the gin cured mackerel (which looked very fancy I can’t lie), and I went for the crispy dauphinoise croquettes with Colman’s mustard which were lovely. The little one had a kids roast which was the perfect size… followed by a chocolate ice cream that he fully committed to (yes, drinking the bowl included 😂)

The roast itself was a bit hit and miss for me… the pork wasn’t quite to my taste (a bit dry and fatty), but everything else was lovely and we still had such a nice time. Special mention to the sweetest server who noticed I hadn’t eaten much of the meat and kindly discounted the dish, which she absolutely didn’t have to do but was so appreciated 💛

It’s such a gorgeous little village pub and the rest of the menu looks amazing, so I’d definitely go back and try something else…hoping it was just a one-off!

We finished the day at the garden centre picking up a few bits… including a flamingo watering can chosen by my flamingo-obsessed little man 🦩 which I think might be my favourite purchase of the day. by @norfolksupperstories

I feel like my air fryer is definitely one of the hardest working appliance in my kitchen. It’s plays my hero whether I am cooking for my little one, family dinners or solo cooking…honestly I would be lost without it.

Tonight I made Kofte Crumble & Whipped Feta Flatbreads using the Kofte seasoning from @jdseasonings …and when I say they were HEAVENLY, I am massively downplaying them 😂🫶🏻

Once everything was prepped, the mince, courgettes and tomatoes went into the air fryer and I actually got to sit down for five minutes while it cooked (rare luxury).

The mince cooks into these crispy little kofte bits, the tomatoes go all soft and jammy, and then everything gets piled onto a warm homemade flatbread with whipped feta and a fresh herby and cucumber salad. It had so much flavour, but still quite fresh and balanced thanks to the lean mince and yoghurt.

It’s one of those dinners that somehow hits the mark of tasting really good without feeling too heavy. Loads of flavours, but still very fresh.

Here’s the recipe if you fancy giving it a go 🩷

400g lean beef mince
@jdseasonings Kofte Seasoning
2 garlic cloves, grated
Zest ½ lemon, handful parsley
200g cherry tomatoes
1 courgette, cut into rounds

50g feta, 120g Greek yoghurt, juice ½ lemon (for whipped feta)

Flatbreads:
250g flour, 1 tsp baking powder, ½ tsp salt, 150g Greek yoghurt, 1 tbsp olive oil

Salad: cucumber, red onion, chopped tomatoes, fresh mint and parsley, crumbled feta.

Mix mince with JD seasoning, garlic, lemon zest & parsley. Break into small chunks in the air fryer and cook 200°C for 8–10 mins, shaking halfway, until browned and crispy.

Tops the tomatoes and courgettes in lemon juice and garlic granule Airfry for 190°C for 6–7 mins.

Mix feta, yoghurt & lemon to make whipped feta.

Mix flatbread ingredients into a dough, rest 15 mins, divide into 4, roll thin and cook in a hot dry pan.

Spread whipped feta over the flatbreads, pile on the kofte crumble and roasted tomatoes, then finish the salad and a squeeze of lemon.

If you fancy trying it, I’ve got a little discount code for @jdseasonings in my bio. Their spice blends make quick dinners like this ridiculously easy.
