SAVE this Peruvian fine dining for your next Amsterdam visit 🤓

I had a pleasure to visit this amazing place with my friend @matt.wilson.gc in June and we had such a great time!

What makes the place special:
Peruvian cuisine shaped by Indigenous traditions and layers of Japanese, Chinese, African, Spanish, Italian and Indian influence.

Chef @kooshkothari was born in India, raised in Peru and trained in some of Lima’s most respected kitchens. His food feels deeply connected to Peru, but never predictable.

Sommelier: @the_grapeful_ale

Amazing atmosphere , great wines and amazing food 🤩

Swipe for the dishes, wine pairings and an unexpected Bolivian wine discovery.

Started off with a cocktail 🍸: Pisco Sour

Fresh citrus, silky foam and the unmistakable character of pisco made this a bright, refreshing start.

A classic Peruvian cocktail in exactly the right setting.

A little started with the cocktail:
Zeeland oyster N.3, piparra granita and kaffir lime oil.

Cold, saline and incredibly refreshing. The kaffir lime lifted the oyster’s briny sweetness, while the frozen piparra added a tangy green-pepper note.

A small opening bite, but already a very clear introduction to NAZKA’s style

Not the churro I was expecting and that was the point.

A savoury potato churro with green pickled mango: warm and crisp, with the richness of potato cut by something fruity, sharp and lightly spiced.

This little bite was one of the first signs that dinner would move freely between Peruvian and Indian flavours.

🐟 SALMON TIRADITO

Cured salmon, cashew-nut leche de tigre and salmon roe.

Rich salmon met the bright acidity of leche de tigre, while cashew added a softer, creamier texture. The salmon roe brought another burst of salinity.

Fresh, rich, citrusy and distinctly Peruvian - exactly the kind of dish that makes wine pairing interesting.
