𝗧𝗵𝗲 𝗦𝘁𝗮𝘁𝗲 𝗼𝗳 𝗦𝘁𝗲𝗮𝗸 🥩 Beef costs a shank and a rump these days! Despite a federal flood of imported beef into the market with a promise of 25% relief, the drought, tariff, war and industry bottleneck-inflated prices have not budged. 💲 The move damaged the domestic industry at an already vulnerable time, but it’s not the cattlemen and women’s first rodeo. 🤠 Through a number of agile shifts and pivots, the Pennsylvania beef industry pushes ahead to greener pastures. 🐃

In 2015, Emily Foster found a huge gap in the Pittsburgh food market when she stopped eating packaged, commercial meat. She started making plant-based meat alternative seitan at home, and a huge local demand quickly revealed itself. 🍴 Since then, she’s built a business on this “wheat meat,” offering the Pittsburgh area a versatile, cook-at home, plant-based protein at local farmers markets and grocery stores. 🥘🌾💚
We chatted with Foster about her scratch made seitan products, which span chicken shreds and ground beef to maple breakfast patties, salami and chorizo crumbles. Foster even shared Sloppy Joe and “Chicken” Pot Pie recipes with us! 👀 Read about her work and find the seitan comfort food recipes on PAEats.org. 🩵
