These sheet pan quesadillas are my favourite! Perfect for feeding a crowd and using up leftovers that might end up in the bin otherwise. You don’t need much mince (or chicken/pork/ whatever Mexican leftovers you have!) at all for these which is another reason they work so well. Recipe down below! 👇🏻 We have 5 young boys, so I’m always cooking and working on ways to make life and food easier without sacrificing flavour! Make sure you’re following for more realistic family meals 👉🏻 @rachie_eats Sheet Pan Quesadillas 🫓 Ingredients 5 large tortillas Leftover nacho mince (or chicken/pork, any Mexican leftovers) Grated carrot Grated cheese Sour cream Butter Directions Preheat oven to 180c fan bake Spread tortillas with butter and layer on a baking tray (Butter side down, 3 tortillas along middle, 2 overlapping top and bottom. All tortillas should be overlapping with enough room to fold over) Spread tortillas with sour cream Add toppings - leftover mince, grated carrot and cheese Fold tortillas over so all toppings are covered and they are overlapping slightly (if your tortillas ended up too small and you have gaps you can use an extra buttered tortilla to cover the gap!) Place another baking sheet on top of the quesadilla and bake in the oven for 5-7 minutes, remove top baking tray and allow to cook for a further 3-5 minutes until golden brown #familymeals #cooking #food #homecooking #fyp Rachie Eats: Dinner, Realistic Meals, Good Food, Real Food, Home Cooking, Realistic Recipes, Yummy Food, Mum, Mom, Follow, Share, Comment, Fun, For You Page, Feed, Whole Food, Nutritious Food by @rachie_eats
Meals I made this week for my family of 6 ✨🌟 Okay, we’re a family of 7 now but I’m behind with these! 😅 Actually we are currently making our way through my freezer stash what with baby number 5 making his grand arrival but this is a realistic week of meals in our house. Hope this gives you some dinner ideas! Most of these recipes will be in my BAGG book, coming soon 🌟🤩 The Panang curry is on my website under recipes - Link in my bio ✨ We have 5 young boys, so I’m always cooking and working on ways to make life and food easier without sacrificing flavour! I love to bless people by cooking for them! We recently had friends over, a family of 8 so with our family of 6 it was 14 people to feed. I wanted to keep it fairly easy as I’m quite pregnant at this point! I’ve found making a couple of roast chickens is an excellent way of feeding a crowd, it’s economical and chicken goes with everything! I made 2 rotisserie chickens + gravy in my instant pots the day before and had them shredded so I just had to reheat them. I made an instant pot biryani, a cabbage & cucumber salad, roast potatoes & pumpkin and 2 loaves of homemade sourdough 😋 Turned out great and I kept it just under $50! Here’s my price breakdown, I didn’t include pantry staples like oil, vinegar, spices etc x2 Whole chickens $28.88 Potatoes $2.60 Pumpkin $2.50 Salad (cabbage, cucumber, spring onions) $6 Sourdough, 2 loaves (homemade) $3 Biryani $6 (rice + veges) Total $48.98 🥗🍚🥒🍗 We have 4 young boys (with another 👶🏼 on the way), so I’m always cooking and working on ways to make life and food easier without sacrificing flavour! When you need a super easy dinner, this is it! This instant pot chicken tikka masala has to be my easiest instant pot recipe. Super easy prep and quick cook time, I can manage this even when I’m very low on energy and time. Recipe below 👇🏻 Save this to make later and make sure you’re following for more easy dinner ideas: @rachie_eats Instant Pot Chicken Tikka Masala 🍛 INGREDIENTS: 2 onions, chopped 1 garlic clove, crushed 1cm piece of fresh ginger, grated 2 teaspoons garam masala 3/4 teaspoon paprika 3/4 teaspoon ground turmeric 1 teaspoon ground cumin 1/2 teaspoon ground cinnamon 2 teaspoons salt 500g passata / strained tomatoes 450g boneless chicken breast, cut into bite sized pieces 1 can coconut cream METHOD: Put all the ingredients except the coconut cream into the instant pot, making sure the chicken goes in last so it doesn’t stick to the bottom during cooking. Secure the lid in place and set to poultry for 15 minutes. At the end of cooking, use the QPR method. Add the coconut cream, stir and keep warm in the pot until ready to serve. Serve curry on basmati rice and/or naan bread. #familymeals #cooking #food #homecooking #fyp Rachie Eats: Saving Money, Groceries, Cost of living, Feeding a big family, Dinner, Realistic Meals, Good Food, Real Food, Home Cooking, Realistic Recipes, Yummy Food, Mum, Mom, Follow, Share, Comment, Fun, For You Page, Feed by @rachie_eats
Meals I made this week for my family of 6 (soon to be 7 🥹🥰🌟). This was a very pumpkiny week, and I managed to freeze a lot of meals out of this too. I doubled the chickpea curry (froze a batch), tripled the meatballs and sauce (frozen those raw), doubled the Mac & cheese sauce (froze a batch), doubled the mince for the nachos (froze a batch) and ended up tripling the pumpkin soup! (froze 2 batches). All these meals prep really well and are super family friendly (and tasty!). Most of these recipes will also be included in my BAGG book (coming soon!) too 🤩🤩🤩 We have 4 young boys (with another 👶🏼 on the way), so I’m always cooking and working on ways to make life and food easier without sacrificing flavour! I made a goal to stock my freezer with a months worth of dinner for post baby to make life with a newborn (+ 4 under 7) a little easier 🤩 For the last couple of months I’ve been doubling meals I’ve already been prepping each week and now I have an amazing freezer stash with 30 meals and 4 batches of cookies! Here’s the meals I have in the freezer: Meatballs in pasta sauce Chicken and rice soup Mexican mince (for nachos or tacos) Homemade sausage rolls Taco soup Mac & cheese sauce Butter chicken Asian meatballs & sauce (uncooked) Pumpkin & chickpea curry Pumpkin & kumara soup Thai chicken (uncooked, instant pot meal) Chicken fajitas (uncooked) Greek meatballs (uncooked) Veggie pasta sauce Chicken shawarma Bolognese Bonus: Chocolate chip cookies (uncooked) x4 batches Some of these I have more than one of, so in total there is 30 meals! I still have a few weeks till baby comes so I’ll probably keep adding to this but I feel very happy with what I’ve achieved 🌟 I have a spreadsheet with all the meals so I know what’s in there, and can easily plan what we’ll eat for the week once baby comes. I focused on meals that freeze and reheat well, are super easy (either just reheat or simple steps to prepare), tasty (meals everyone will actually eat!) and I tried to keep a bit of variety without over complicating things. Future me will thank me! Any other ideas of meals or snacks I need to freeze tell me in the comments! 👇🏻 🌟🌟🌟 We have 4 young boys (with another 👶🏼 on the way), so I’m always cooking and working on ways to make life and food easier without sacrificing flavour! Realistic meals I made in the week for my family of 6 🌟 Having meals on the regular rotation that can be prepped in advance is vital for me, but I also don’t just want to eat soups and bakes. I think I’ve found a good balance with lots of prep-able meals that are all really different and tasty. On this week I prepped the taco soup and chicken & rice soup (both which reheat & freeze very well), I made the sausage rolls and kept them (uncooked) in the fridge till the day. The bacon & broccoli fettuccine I just made on the day but in the past I have done a little prep by chopping onion, garlic, bacon, mushrooms etc. Scroll through for info on the different meals 👉🏻 We have 4 young boys (with another 👶🏼 on the way), so I’m always cooking and working on ways to make life and food easier without sacrificing flavour! I know meal prep can feel overwhelming but it doesn’t have to be! I meal prep every week and it’s hands down the best way I work smarter not harder in the kitchen. By working harder one day I save myself so much time and effort in the long run. There’s so many ways you can do it too, it just depends on what you need the most. Even a small amount of meal prep is so helpful during the week! For me it was the daily dinner time stress that was hardest so I focus on that and I’ve managed to incorporate some baking as well which is amazing for lunches! I aim for 3-4 prepped meals a week and 1-2 baking items made. I do a mix of fully cooked meals (things I can just reheat and eat!) and then partially prepped meals (batch of meatballs, marinated meat or even just some chopped veges). I’ve been doing extra prep lately to get a freezer stash which is actually the ultimate working smarter tip - taking meals I’m already prepping them and doubling. Within just a few weeks I’ve managed to get close to 30 meals in the freezer! (And 3 batches of chocolate chip cookies) This is my third in my series on working smarter, not harder in the kitchen. I’m really excited to share with you my e-book coming out super SOON! I’ve been working away on this for ages and it’s finally all coming together to share 🥹😊🌟 Some time ago I completed my own personal challenge to spend $50 for a week of groceries. Not trying to buy a week’s worth of groceries for $50, but trying to use what I already had and using the $50 to fill the gaps. I was amazed it actually worked and I’ve been able to repeat the challenge periodically since then. The Big Ambitious Grocery Goal (BAGG for short) is everything I’ve learnt and it’s full of all the info/tips and tricks you need on to successfully complete your own grocery challenge, save yourself hundreds (if not thousands!), change your habits and reduce food waste. There’s great resources - inventory sheets, meal plan sheets AND a big recipe section with delicious, family friendly recipes you’ll be making on repeat, even after challenge week. Stay tuned! 🤩 This is the third in my series on saving money on groceries, make sure you’re following so you don’t miss any: @rachie_eats 🤩 #familymeals #cooking #food #homecooking #fyp Rachie Eats: Saving Money, Groceries, Cost of living, Feeding a big family, Dinner, Realistic Meals, Good Food, Real Food, Home Cooking, Realistic Recipes, Yummy Food, Mum, Mom, Follow, Share, Comment, Fun, For You Page, Feed by @rachie_eats
Meals I made this week for my family of 6 🌟 This is another realistic week of meals for us, I’m still meal prepping every Monday (both full cook meals and partial preps) which is working so well. Hope this gives you some good inspo for your next meal plan 🤩 Any questions, let me know in the comments! 👇🏻 We have 4 young boys (with another 👶🏼 on the way), so I’m always cooking and working on ways to make life and food easier without sacrificing flavour! Raid the cupboards meals are a game changer, it’s amazing what you can make from what you already have and it’s fun being creative with different ingredients! This raid the cupboards meal was a lemon & garlic pasta (with lots of butter), with roasted pumpkin, sausage & parmesan. Super easy but so tasty, my family LOVES this simple pasta sauce 🤤 Recipe down below 👇🏻 This is the second reel in my series on saving money on groceries, make sure you’re following so you don’t miss any: @rachie_eats 🤩 #familymeals #cooking #food #homecooking #fyp Rachie Eats: Saving Money, Groceries, Cost of living, Feeding a big family, Dinner, Realistic Meals, Good Food, Real Food, Home Cooking, Realistic Recipes, Yummy Food, Mum, Mom, Follow, Share, Comment, Fun, For You Page, Feed Lemon & Garlic Pasta Sauce 🍋 Ingredients 4 Tablespoons butter 3 Tablespoons extra virgin olive oil Zest from 1 lemon Juice from 1 lemon Salt and pepper to taste Cooked pasta of your choice Optional toppings: Chopped bacon, roast pumpkin, parmesan and basil Instructions Melt butter in frying pan. These are an easy win, I managed to make these in 15 minutes before I picked up the boys from kindy and they were very well received! Enjoy ☺️ Pikelets 🥞 1 cup self raising flour ¼ tsp salt 1 egg ¼ cup white sugar ¾ cup milk (approximately) Sift the flour and salt into a bowl. In another bowl beat the egg and sugar with a whisk until pale and thick. Add the egg mixture and the milk to the dry ingredients and mix until just combined. Gently heat a non-stick frying pan and drop tablespoonfuls of the mixture from the point of the spoon onto the surface. When bubbles start to burst on the top of the pikelets, turn them over and cook the second side until golden.
