Green Curry Fried Rice 🍚

If you’ve been following me for any length of time you probably know I’m a big fried rice aficionado. Lately, it’s been all about “Thai Inspired” flavours and this is just a continuation of that. 

I followed a very similar structure to what I would normally do, frying shrimps, ginger and garlic, seasoning with fish sauce, golden mountain seasoning and sugar. The main difference is what I did with the rice.

This is inspired by Golden Fried Rice. In that recipe, you separate your egg whites from your egg yolks and coat your rice in the yolks before frying. The final result is equally beautiful looking as it is luxurious. It’s a recipe that every time I make, I feel like I’m doing something right in my life.  I took this idea of coated rice and decided to put my own twist on it. What would happen if you coated your rice in curry before frying it? 

I’ve always got some curry pouches from @wildriceworld at home so I decided to use those. Personally I think the milder, red curry would provide a prettier final result but I was going for a lil spice so the green curry made the most sense.

I made sure to cook my rice with a little less water than normal. My goal was to not end up with a big wet pile of slop. Surprisingly, this worked really well! The rice absorbed the curry without becoming too hydrated and once fried, it still had decent grain separation. If you have a really high powered stove I’m sure you could fry this until as “dry” as a more traditional fried rice.

Is this a little bit out there? Yeah sure. But it’s fun and it’s tasty and I think if you try it out, you’ll be pleasantly surprised! Let me know what you think!

Love a classic Pad Thai, however I fancied doing something a bit different with the sauce from @wildriceworld 

These sweet, sour and salty skewers worked really well with the creamy silken tofu base and a nice char on the tofu skin.

I garnished the dish with typical Pad Thai accoutrements.

Khai Jiao - Thai Crispy Omelette 🇹🇭

My never ending search for the best rice & egg dish continues. There’s a lot of great options, but this Thai crispy omelette has to be pretty high up on the list. Super crispy, a subtle hint of fish sauce, pairs perfectly with a panang red curry, whats not to love? 

I’m using a recipe from @themeatmenchannel that uses the following: 

-eggs
-water
-cornstarch
-fish sauce
-lime juice

All whisked up and then fried until golden brown and delicious. I paired mine with a curry from @wildriceworld but this would also be super tasty on its own (with some rice).

Your sandwich saviour is back with another slammin sanger! ✌️

The crispyness is made from crispy rice, toasted peanuts and sriracha shallots from @wildriceworld 

The shredded pickle salad was crafted using julienned daikon, carrots and cucumber. Made with plenty of spring onion, chilli, coriander, basil and lime juice. Inspired by Thai flavours!

The soya chick’n pieces were cooked slowly in a panang sauce from @wildriceworld 

The sriracha is from @sriracha_fg and the sourdough is always from @lostmillbakery

Thai Crispy Rice Salad

Massively customizable and quick to make, this is a plate that I just can’t get enough of right now.

Here’s what in mine, starting with the salad:

- Day old rice, coasted in fish sauce, oyster sauce, and a bit of oil 
- Crispy Namprik from my friends at @wildriceworld this is their new sriracha flavour 
- Thai Basil
- Red Onions
- Salted Peanuts

For the Sauce:

- Lime Juice
- Fish Sauce
- Palm Sugar
- Golden Mountain Seasoning Sauce
- A few Thai chillies

To serve:

- Gem Lettuce
- Cucumber
- Lime
- Extra herbs if you like

With the weather getting warmer and everyone craving food thats more handheld and picnic friendly, this is definitely a recipe worth considering.

MISO MAGIC NOODLES w/ GOLDEN TEMPEH + NAMPRIK CRUNCH ✨

Weeknight bowl energy with a spicy shallot glow-up 🔥

Serves 2 (or 1 person who “just wants a small bowl” and then eats everything)

You’ll need:
🍜 200g noodles
🧈 180g tofu or tempeh, cubed - we’re loving @betternaturetempeh 
🌿 2 spring onion, finely sliced
🍋 1 lime wedges
✨ TOSS Miso Magic (deep, savoury, totally drizzleable)
🔥 @wildriceworld Namprik Spicy & Crispy Shallot (crispy, spicy, obsessed already)

How to make it:
1️⃣ Boil noodles in water until tender. Drain and set aside.
2️⃣ Toss tofu in a generous coating of Miso Magic
3️⃣ Pan-fry tofu until golden and sticky on all sides
4️⃣ Plate up noodles, top with miso-glazed tofu
5️⃣ Finish with spring onion and a heroic spoonful (or three) of Wild Rice Namprik
6️⃣ Optional but encouraged: extra drizzle of Miso Magic.

DRIZZLE, CRUNCH, REPEAT
Minimal prep, maximum flavour. TOSS Beyond the Salad Bowl ✨🤍

The Sounds Of Lasagna

Thai Penang Red Curry Lasagna!

After I had shared my previous pressed lasagna creation, @wildriceworld reached out with a great idea. Give it a Thai twist and replace the bolognese with their Thai Panang Red Curry. This was something that I obviously couldn’t say no to - just in case anyone was curious how this thing whole thing came together.

Took some learnings from the last pressed lasagna and opted to find some really nice preboil REQUIRED sheets of pasta from @tenutamarmorelle . I found that using the oven-bake ones led me to using a lot more pasta to create a solid exterior. With these preboil sheets I was able to keep the exterior nice and slim with only one layer. Full transparency - although the singular base did hold up, the roof of my lasagna slab did fall off when pan frying and left an exposed layer of curried beef. Not an issue, but a note for anyone attempting to recreate this themselves. 

On to the filling, cooked down a bunch of beef, carrots, shallots, and garlic and then added the packs of curry - super easy.

Layered as many layers as my terrine mold could hold, baked, pressed overnight, cut into thick slabs, pan fried and finally served on a warm bed of curry-laced béchamel sauce.

These two day projects always lead to so many nerves and excitement - Has it worked out? Will it be edible? Was this all worth it? 

The answer to all of those is YES!

Soup season 🤝 flu season

As you can hear, I’m a bit under the weather at the moment so I was very happy to have a big comforting bowl of Thai green noodle soup ready in a flash 🍜

I added some minced garlic and ginger to the pan, followed by the curry sauce and some chicken stock before simmering the noodles and topping with spring onions and coriander. 

@wildriceworld specialise in authentic Thai food. Their sauces are made with fresh herbs and real spices for an absolute flavour bomb. Combined with their umami-loaded namprik, this dish blew my tastebuds, my mind and my cold out the water. 

If you need a curry in a hurry or want a cosy bowl of spicy soup… Wild Rice know where it’s at for quality and flavour 👌
