The Percurso menu at CURA balances between land and sea without treating them as separate chapters. The opening courses are restrained and vegetal, built around cereals, roots, herbs and acidity. Then the menu gradually shifts towards deeper marine notes: oyster with rice and Oscietra caviar, smoked eel with cabbage and apple, scarlet shrimp with açorda, squid with bago de arroz bean, elderflower and kombu. It is a progression that feels deliberately Portuguese, not because it relies on obvious symbols, but because it works through product, preservation, bread, broth, beans, seafood and acidity.

Bread is given its own moment: ancient wheat bread, corn bread, Azores butter and green olive oil. It could have been a transition, but here it becomes part of the structure of the menu — a reminder that Portuguese cooking is also built on grain, fat, fermentation and simplicity.

The second half of the meal becomes more grounded. Atlantic wreckfish comes with mussels, seaweed and pumpkin, keeping the ocean present but adding sweetness and depth. Lamb appears twice: first through coscorão, kosho and nori, then with radish, mint and kumquat. The combinations are contemporary, but the flavours remain legible. Nothing feels abstract for the sake of being abstract.

The desserts continue in the same direction rather than breaking away from it. Pineapple, chamomile and sparkling wine bring freshness; honey, ginger, orange and malt bring warmth; coffee and thyme with sweet potato and almond closes the menu on something earthy rather than overly sweet.

Across the Percurso, CURA does not present Portugal as folklore. It works through its pantry — seafood, bread, beans, olive oil, herbs, roots, smoke, acidity — and gives those elements a sharper, more contemporary form. The result is a menu that feels edited rather than ornamental: technical, polished, but still attached to the ingredients and memories it comes from.

CURA 🌟 - Lisbon 🇵🇹

The word is right there in the name : CURA, from curadoria, the Portuguese word for curatorship. It was the founding premise of this 28-seat restaurant when it opened in 2020 inside @fslisbon , and it remains the most honest description of what happens here.

Ingredients are selected with intention, drawn from Portugal’s regional and seasonal palette, then treated with a contemporary eye. Since February 2025, the kitchen has been led by @rodolfolavrador , a Lisbon-born chef promoted from within after five years alongside the founding team. His path took him from the International Culinary Center in New York to Michelin-starred Agern in Grand Central Terminal, then to Mãos in London’s East End, before returning home through Bairro Alto Hotel and Ofício. The biography matters because it explains the cooking: enough distance from Portugal to see it clearly, enough rootedness to cook it honestly.

The Percurso menu — ten courses, with Portugal as its guiding thread — moves with clear intent. Each dish starts from a single ingredient, and the progression feels cumulative rather than demonstrative. Scarlet shrimp arrives with the directness of something pulled from the Atlantic, its sweetness allowed to speak without unnecessary distraction. Percebes follow in the same coastal register: those barnacles that grow on the most exposed rock faces of the Portuguese shoreline, demanding as much courage to harvest as restraint to serve. Atlantic wreckfish, a deep-water species from the northeast Atlantic with firm, clean flesh, confirms the point: this is not a menu performing Portugueseness, but one that knows exactly where it stands.

In a city where gastronomy is increasingly visible on the international stage, CURA occupies an interesting place: a Michelin-starred hotel restaurant, yes, but also a kitchen trying to express a modern version of Portugal through its ingredients, memories and contrasts.

Culinary Alert — 🇵🇹 CURA, Lisbon: A meticulous curatorship of the Portuguese soul ✨

Located within the iconic Four Seasons Hotel Ritz Lisbon, CURA is a space where gastronomy is treated as an act of fine art. Under the leadership of chef Rodolfo Lavrador, the restaurant offers a journey defined by « meticulous curatorship, » where every interaction reveals a deeper connection to the terroir.

Chef Lavrador’s philosophy is rooted in a profound responsibility toward Portugal’s regional diversity. His cuisine is a search for essence and purity, using each seasonal ingredient as a point of departure to weave together traditional recipes with avant-garde techniques. Much like the modern Portuguese artworks that adorn the hotel’s walls, CURA’s menu reveals layers of complexity beneath seemingly simple, minimalist compositions.

The experience unfolds through stages like « Passo »—a step in a gastronomic path that captures the essence of the kitchen in a « new and better way ». By elevating familiar flavors through innovative methods, Lavrador and his team of nearly a dozen cooks create a harmonious blend of textures and sensations. It is a vision of sustainability and constant refinement where the product is allowed to shine at its fullest expression.

Experience a culinary narrative where Portugal is the guiding thread, and the magic happens at the intersection of heritage and innovation.
