When we found out we’d made the Top 100 at the @nationalrestaurantawards and were absolutely thrilled, but to learn we’d gone in at number 67 is, in all honesty, is a bit surreal.

I often get asked where to go for great seafood in Manchester. Specialist restaurants like Fish!, Livebait and Randall & Aubin have come and gone, but generally if you wanted whole roast fish and a selection of crustacea then Cantonese restaurants like @live_seafood_ltd were your best bet.

Thankfully, places like Higher Ground and Bar Shrimp have arrived to raise the game, but @shaunymw, Chef Patron at @winsome_mcr, is also a man who undoubtedly knows how to grill denizens of the deep over open fire, before slathering them in garlic butter and aromatics and serving simply and generously.

So that's where @themarshallgary, @bapibhattacharj and I headed for the latest installment of our rolling twentieth year of 'Grand Days Out', BYO Burgundies/Burgundy-a-likes under our arms, and it was an absolutely brilliant lunch.

Oysters; some off-menu langoustines; a whole roast brill with leeks and laverbread; plenty of carbs in the twin forms of "clotted cream mash" and Shaun's signature chips; some token greens; and an enormous mutton and carrot pie with extra pouring gravy. And for pudding? "Carrot cake madelines" - a stroke of genius.

I mean come on, who would not want to lose three hours with great friends, navigating that gastronomic line-up as candlelight begins to ease daylight aside? Other stops along the way included The Grey Horse, Bar Shrimp, Piccolino and Schofield's, and a good time was had by all.

As one ages, dining tastes can shift from huge chunks of red meat to white fish and seafood, and from teeth-staining reds to fine-boned whites. Luckily, shuffling along our personal moral coils has been in perfect synchronicity with the blossoming of Manchester's fish cooking scene.

And better still, with advanced years comes a sudden innate ability to fillet a flatfish - ease the meat away from either side of the spine, being sure to also clip off the skirts with the tip of the spoon, before lifting off the top fillets, carefully flipping and repeating.

So middle age ain't so bad. If there is a negroni waiting for me then maybe I will go gently into that good night after all. by @shaunymw

One of the best things I ate in Manchester last year, and it cropped up at @winsome_mcr with just a day or so to spare.

This was goose served as a sliced breast the colour of a good Burgundy, napped with jus; a slab of its seared liver; a dreadnought of a sausage, packed with its offal, and even a rilette on a trencher of sodden sourdough. Choucroute and cabbage on the side, plus @shaunymw's legendary chips, and some English mustard to make the whole dish sing.

Simple, brilliant, generous cooking, with quality ingredients expertly buffed to shine, classic combinations, and extraordinary amounts of flavour.

We are mad for it to announce we are bringing @winsome_mcr from Manchester to Melbourne for @melbfoodandwine festival on March 24th & 25th

@shaunymw is one of Manchester’s most celebrated chefs, bringing his whole beast butchery and cooking skills to the house.

Shaun and our house head chef/co owner Mark grew up together as best mates back in England and will now collide together to collaborate on a dinner party celebrating whole animals, modern British cooking and their friendship (embarrassing school photo from cooking class is the last pic 🤣).
