The Hail Mary @barbacellis in Hico! 🔥🔥

Lots of flavor coming out of Hico, Texas thanks to the duo of @austin__odom and @chefshannonodom.

I was lucky enough to have to double back through the area recently and was able to make a quick stop at @barbacellis.

While I wanted to eat the whole menu and sample some sandwiches, I showed restraint and went with a pizza and wings.

The pizza is in the Neo style featuring a sourdough crust with beautiful blistering along the edges after a short stint in the wood fired oven. Sausage, hot honey, tomatoes and red onions were a pleasant balance to a tasty pie.

The garlic parm wings are always hard for me to resist, and I’m glad I didn’t. Crispy and loaded with flavor these were some of the best wings in recent memory. They weren’t pretending to have flavor and then lightly dusted… they were overwhelmed with flavor and I was overwhelmed with joy.

It’s amazing to me the quality of food you can get in a town like Hico, but after now having both locations, it’s a must visit to me.

Next time I’m getting the sandwiches.

There’s more to enjoy in Hico than just the five-star dining right below your feet. Within walking distance, you’ll find some of the best pizza in town.

Fair warning- it’s so good, you may end up grabbing a box to go for a late-night snack. 🍕

New episode on @spotify and @apple - Austin and Shannon Odom are the culinary masters behind Oma-Leen’s and BarbaCelli’s in downtown Hico, Texas. They are self taught chefs and restaurateurs that curate exceptional cuisine and hospitality. I’m a self-certified pizza expert, and @barbacellis pizza is among the best I’ve had. @omaleens is a fresh spin on Southern Cuisine. It’s locally sourced and made from scratch. Both restaurants, with their unique decor, beckon you to linger, laugh, and love with friends. If you don’t live in @hicotx - BarbaCelli’s and Oma-Leen’s are destination dining locations that should be on your list.

In this episode, @austin__odom and @chefshannonodom recount their journey into the culinary world. It is one of grit, fortitude, and the unwavering desire to create good food with the hospitality you’d find in your grandmother’s kitchen. They made many mistakes along the way, but they turned each mistake into an opportunity. Allison and I previewed this episode while on a road trip to Montana. “I’m really inspired by their journey,” Allison said after we finished the Odom’s podcast. I know you’ll be inspired too.
