Navratri Day 1 was… unexpected, to say the least! 🌟

As you all know by now, through social media, friends, or word of mouth, Sampurn is now open full-time! And we’re loving how Surat has made Sampurn a part of its everyday routine. ❤️

We’ve also launched 3 new Kaapi Bar coffees - Ginger Ale Kaapi, Coconut Foam Kaapi & Lychee Iced Kaapi. Interesting flavour combinations that are honestly worth every penny!

But there are a few questions we keep getting, so let’s talk about them!

1. Why aren’t we open till 4 AM?

Sampurn has always been rooted in South Indian breakfast culture. We didn’t want to focus only on Navratri nights when we also want to be the everyday breakfast spot for families, regulars, and even the older generation. 🌟

2. Why haven’t we launched chilli oil dosa or followed the latest food trends?

We love experimenting, but not everything belongs on our menu. Our vision is to be modern yet rooted in South Indian traditions something an 8-year-old and an 80-year-old can enjoy equally.

3. Is Sampurn always too full to get a table?

Not at all! We’ve also been working on our takeaway experience, from getting your orders right to ensuring proper packaging, so you can enjoy Sampurn at home too.

There’s so much more we want to share, but right now, our focus is on building stronger SOPs, training our team, and getting our operations right.

Because we’re not just building a restaurant; we’re building something Surat can be a part of for years to come. 🧿

Some call it luck.
Some call it a one-time hit.
And most of you call it “the spot.” 🤍

This week, we were quite inactive on socials, mostly because we were busy taking care of a few things behind the scenes to make the customer experience better.

Apparently, socials are just an added awareness bonus.
The real game? Offline word of mouth. And honestly, nothing beats that.

This week, we increased our service staff so that whenever you ask for something, they just tend to appear like a Ginny. 🧚‍♂️😂

We’re keeping it real and raw, learning every single day and improving as we go. Meanwhile, we’re also working on a long-asked-for project.

Filter Kaapi Cheesecake & Thecha Cheese Dosa unexpectedly became the dark horses, with that pure, authentic taste where you can just tell the ingredients are of the quality we believe in.

We also added mozzarella cheese to our dosa category, and apparently, a few South Indian cafés around Surat have been taking inspiration from it.

Honestly? We’re pretty happy about that. 🤭

And then there are your comments:

“Need bigger space.”
“Jagah badi karo.”
“Itna waiting kaise bhaiya, badi jagah lelo ab.”
“Jagya bov nani che.”

They keep coming. 😂

And somewhere, we actually like being asked for more.

Because maybe this tiny space being too small for you is one of the smallest validations we could ask for. 🤍

Another week, another recap.

It’s been more than 4 months since we opened Sampurn Benne, and honestly, every single week we’re learning something new.

Here’s what we’ve been working on 👇🏻

• Soft Serve fixed. 🍦
Our soft serve used to start melting within 5 minutes of being served. We worked on the freezing capacity of the machine and corrected it. Now, even if you keep it for 15+ minutes, it holds much better.

The important part? We made the correction without compromising on the quality or taste.

• Takeaways & parcels stopped again.
We know a lot of you want to take Sampurn Benne home, but we’ve been facing quality issues with certain products during takeaway.

Our crispiest dosa can literally become our worst dosa within 15 minutes in a parcel.

And when idlis are packed hot during rush hours, the combination of heat, ghee podi and moisture can affect their quality.

So for now, we’d genuinely request you to dine in whenever possible. We want you to experience the food the way we actually intend to serve it.

We know many of you are waiting for takeaways and parcels and we promise, we’re working on getting this right.

• Thecha is having its moment. 🌶️
Thecha has quickly become one of our bestsellers, with Garlic Thecha currently sitting at #1.

The Mozzarella Dosa has also been a massive hit and is moving amazingly well.

• Kaapi Bar is picking up.
Our range of Kaapi Bar drinks and desserts is now moving rapidly and surprisingly, some of them are doing really well in takeaways too.

We’re still experimenting, learning and finding out what people actually love.

• Ambience we know.
This is probably one area where we still have a lot of work to do.

We currently lack the ambience we want Sampurn Benne to have, and we’re working day and night to create something genuinely soothing an ambience that matches the food we’ve worked so hard on.

The feedback we’ve received both online and offline gives us confidence that the food is where we want it to be. Now we want the overall experience to catch up.

And honestly, this is exactly why we’re taking our time with expansion. 4+ months in. Still learning. Still fixing. Still building

What a fabulous week it has been!

Here’s what we observed this week:

• The Jain crowd has become much more active. We’re constantly working on expanding our timings to a full-day service and will update you as soon as we’re ready. We’ve also improved the level of hygiene we maintain for Jain orders and are working hard on consistency.

• Tiramisu Kaapi Soft Serve has become our new bestseller! It has seen almost 23%+ growth in attraction compared to last week, and we’re honestly loving how much you guys are enjoying it.

• The Kaapi Bar & dessert menu is slowly becoming a regular part of your orders. We’re seeing more and more orders for Irish Nariyalam and Cranberry Tonic. Milo and Bournvita have also started moving really well in their iced versions. And yes, we’ve literally started spotting our cups everywhere — people carrying them around, and that feeling is something else!

• We’ve launched our new Thecha Dosa, available in both Plain and Masala versions. Along with that, we’ve also introduced a range of Twin Benne Crisper Dosas — honestly, some of the best dosas we’ve made yet!

• The kiosks are now fully functional. Everything is finally up and running, and we’re excited to see how you guys use them.

• The constant customer feedback has been insane. We started this journey on 8th May, and honestly, when we look back at Day 1, I can confidently say we’re almost 400% better today. There’s still a long way to go, but seeing the improvement week after week makes it all worth it.

Thank you for showing up, giving us feedback, trying new things and, most importantly, being a part of the Cult.

We’re just getting started.

Sampurn Thecha is inspired by a very traditional recipe, just like the ones our elders used to make by grinding everything by hand and generously spreading it on pav or have it as side dish.

As always, we’ve kept it to only clean ingredients, just like we promised. It’s something you definitely shouldn’t miss!

Just like our Garlic Benne Masala Dosa, Thecha goes incredibly well with Benne Dosa when spread generously on top.

Every week at Sampurn teaches us something new.

Consistency is everything.
One great dosa isn’t enough. Every dosa that leaves our kitchen needs to feel just as comforting and satisfying as the last one.

Hygiene is non-negotiable.
Behind every happy table is a team constantly working to keep our kitchen, processes and spaces better.

Customer experience is in the smallest details.
From the first greeting to the last bite, we’re learning that people remember how a place makes them feel.

And of course, your feedback continues to shape us every single day. We read it all, discuss it all and try to become better because of it.

But more than the numbers, what truly stays with us is this, you’re choosing to spend your time, your conversations and your little celebrations with us.🤍

We’re still learning. Still improving. Still obsessing over every detail.
